Seared Sea Scallops
Ingredients
1 lb. Scallops
4 oz. Shaved Fennel
4 oz. Blood Orange Segments
2 oz. Grilled Ramps
1 oz. Blood Orange Juice
2 oz. Extra Virgin Olive Oil
1 oz. Micro Basil
1 tbsp. Sea Salt
1 tsp. White Pepper
Blended Oil

Assembly:
Season the scallops generously, Sear on high heat in a pan with the blended oil. Cook on both sides for 1 minute. Place remaining ingredients in bowl. Place the salad on a plate and top each one with a scallop. 4 oz. peeled and de-veined prawns or shrimp.
