Dave's "Cumin and Oregano Chicken with Adobo Honey Butter"
Ingredients:
1 Tbsp. olive oil
8 oz. chicken breast, cleaned and cut into bite-sized cubes
1 Tbsp. cumin
1 Tbsp. oregano
1 Tbsp. honey
kosher salt
black pepper
tangerine, juiced
4 4" bamboo skewers
Method:
Season each piece of chicken on all sides with salt and pepper and then roll in mix of ground cumin and oregano to lightly coat. Then heat oil in saut pan and place skewers into pan and cook on both sides until cooked through but not dry, then drizzle with honey and squeeze of tangerine. Let rest until service.
Chipotle and Tangerine Honey Butter
1 Tbsp. adobo ( from can of chipotle chilies)
2 Tbsp. honey
8 oz. unsalted butter
1 tangerine, juiced
kosher salt and black pepper
Method:
Heat small sauce pan and melt butter then add adobo, honey, tangerine and salt and pepper. Let cook until all ingredients are blended together. Serve in small ramekin with skewers.
Cook until parsnips are cooked through. Puree all ingredients in a blender. Season with salt and pepper to taste.
