Ingredients 5 Baby Manila Clams 5 Sea Beans, grilled 1 oz. Marcona Almond, ground 1 pinch Chili powder 1 Pinch sea salt 1 oz. Ginger, juiced 1 Maroon Carrot, juiced 5 Coriander Leaves Procedure 1. Poach clams. Dust with almonds and chili powder. 2. Reduce carrot juice with ginger juice until syrup. 3. Sauce plate with carrot reduction, place clams and sea beans decoratively on plate with coriander leaves. |
