Seafood Ragout

Serves 4.
Ingredients :
4 large prawns
1 pound Salmon Filet / or favorite fish
1/2 pound sea Scallops
1/2 pound Mussels
1/2 pound Clams
1 large eggplant
1 red onion
4 large carrots
4 Roma Tomatoes
Olive oil
Fresh Garlic
Salt / Pepper to taste
Directions :
Cut fish into 8 portions, and toss all seafood with olive oil, garlic, salt, and pepper and place in to a large preheated saute pan. when fish and seafood are browned on both sides moved to a sheet and hold. Rough cut all vegetables into large pieces and toss with oil, garlc, salt and pepper place on a sheet pan. place seafood mix and vegetables into a preheated oven at 425 and roast until vegetables are golden brown on the edges, and seafood are cooked to your desired temperature. remove and serve in a turine dish with your favorite white wine and fresh bread.
