Seared Salmon Over Wilted Spinach

Are You a Top Chef?





Serves 1.

Ingredients :
1 6oz Salmon filet
3 slices of sliced zucchini
3 cocktail onions
1 cup spinach (fresh)
2 TB chopped garlic
2 TB olive oil
1 lemon
3 tsp balsamic vinegar (reduced)
2 TB Butter

Directions :
1. Sear the salmon in a hot skillet with the butter. Then place on grill to finish cooking process. Squeeze half of lemon on top.
2. While that cooks steam the zuchinini (if you can't steam it, boil it then place in an ice bath)
3. At the last minute cook the spinach in the oil and half of the garlic.
4. Grill off the zuchinini with the oil and garlic.
5. Reduce the Balsamic vinegar.
6. Place the zucchini on the plate in loops with the spinach in the center of the plate.
7. Place each of the cocktail onions on each corner of the plate. Do the same with the balsamic vinegar.
8. Cut a thin slice of the lemon and cut down the center and twist.
