Cucumber and Radish Salad with a Citrus Yuzu Vinaigrette
Ingredients:
8 radishes, mixed varieties such as Black and Watermelon, peeled
2 cucumbers, peeled
4 heads baby Bibb lettuce, washed and separated into leaves
1/3 cup Yuzu juice, available at Asian markets
1 cup extra virgin olive oil
Salt and pepper for seasoning
Directions:
1. In a small bowl, combine Yuzu juice and olive oil. Whisk to combine. Season to taste with salt and pepper.
2. Slice radishes and cucumber as thinly as possible and place in a small bowl. Drizzle radishes and cucumbers with vinaigrette and toss gently to combine.
3. Place lettuce leaves in a medium bowl and drizzle with vinaigrette. Toss gently to combine.
4. To serve: arrange layers of radishes and lettuces on each plate. Drizzle with remaining vinaigrette and serve.
