One-Pan Breakfast Frittata
Ingredients:
1/2 pound chopped bacon
12 eggs
2 cups cream
1/2 cup finely chopped parsley
1/2 cup finely chopped chives
1 cup of shredded gruyere cheese
6 potatoes, cut into equal size cubes
1 onion, chopped
1. Fry bacon over medium heat in a large frying pan.
2. In a large bowl, combine eggs, cream, parsley, chives, and cheese. Whisk together to create an egg-custard mix. Place in fridge to cool.
3. When bacon is almost cooked, add potatoes and onion. After around 7 minutes, or when potatoes are tender, remove from heat and add the bacon, potatoes and onions to the egg custard mix. Note: It’s important to add the heated elements to the cool egg mix, and not the other way around, as the heat from the frying pan will cook the eggs too fast.
4. Blend the entire mixture in the bowl, and then pour back into the frying pan.
5. Place the frying pan in a 400 degree oven. After 10 minutes, check the frittata. When it frittata has become firm in the center, and the edges are slightly brown, remove from the oven, and flip onto a baking sheet.
6. To plate, place plate on top of upside down frittata and flip everything over. Garnish with parsley.
