BRONZED TUNA WITH BLACK BEAN AND CORN MÉLANGE

Serves 4.
DIRECTIONS
Combine all ingredients for the mélange, mix well and reserve.
In a small bowl, mix paprika, Cajun seasoning and sugar. Coat each Tuna steak on all sides with mixture.
In a large sauté pan, add vegetable oil and bring to medium-high heat. Sear Tuna to rare and remove.
On serving plate, place tuna next to bean and corn mélange and garnish with very thinly sliced seedless cucumbers in a snakelike formation around the tuna.
INGREDIENTS
THE TUNA:
4 – 8oz Yellowfin Tuna Steaks
1 Cup Paprika
1/2 Cup Cajun Seasoning
1/3 Cup Sugar
THE BLACK BEAN AND CORN MÉLANGE:
14oz Black Beans (Cooked and Drained)
8oz Kernel Corn (Cooked and Drained)
2T Fresh Cilantro (Minced)
1/2 Tsp Red Wine Vinegar
1/2 Tsp Lemon Juice
1/2 Red Onion (Finely Diced)
