Opakapaka (Hawaiian Snapper) Poke with Seabeans
Paka is the Hawaiian name for crimson, or red, snapper.
Serves 4.
Ingredients:
1 pound red snapper, skinned, deboned and cut 1/2" cubes
1/2 cup sea beans, roughly chopped
2 tablespoons extra virgin olive oil
4 tablespoons yuzu juice
1 tablespoon mirin
1 tablespoon soy sauce
1 teaspoon sugar
3 cloves garlic, finely chopped
1 inch piece fresh ginger, peeled and finely grated
1 small red onion, finely chopped
1 tablespoon black sesame seeds, toasted
Sea salt and black pepper for seasoning
Directions:
1. In a medium non-reactive bowl, combine olive oil, yuzu juice, mirin, soy sauce and sugar. Whisk until sugar is dissolved and mixture is smooth.
2. Add garlic, ginger, red onion and sesame seeds and whisk to combine. Season to taste with salt and pepper.
3. Add red snapper and sea beans and gently toss mixture with a rubber spatula to completely coat fish and seabeans with sauce. Chill mixture for 15 minutes to allow flavors to combine.
4. Arrange on plates and serve.
