Open brisket and season with salt
Grill the brisket
Transfer the grilled brisket to a pan lined with the prepared vegetables and aromatics
cover the brisket with the red wine.
Cover the pan with alluminum foil
Place in the oven
Allow to cook for 3-3.5 hours until fork tender
Once the brisket is cooked through, set aside to cool to room temperature
Strain the liquid and reserve
Transfer the steamed ribs to a pan and place in the cooler to cool over night and get ready to portion
store in cooler covered with plastic until next day when they are ready to be portioned.
