Guest Blogger: Rocco DiSpirito!

Padma graciously asked me to guest blog for her. So I said, “sure, why not?” I had such a wonderful time being a guest judge on Top Chef that I want to, foremost, thank the folks at Bravo, Magical Elves, Tom, Padma, Gail and Ted. I want to congratulate them on their well-deserved Emmy nomination.

I have been a fan of Tom’s work since I trailed at his three star NYC restaurant Mondrian about 15 years ago. As far as I am concerned, any work with Tom is work to be proud of. I met Padma 7 years ago at a photo shoot; lovely then, lovely now. Ted and I are friends from the Bravo/NBC world and Gail is a new friend.

I wasn’t sure what to expect when I agreed to appear on Top Chef. It’s a thinking person's reality show about cooking that transcends both reality television and cooking. Very clever.

You say "I have a long road ahead of me before I am forgiven for my behavior on "The Restaurant." True - but get back into the kitchen and start cooking like you did at UP, and you're 95% there. Cook, and we'll follow.

Well - so long as you're nicer to the servers than you were before. I've heard stories, and they ain't pretty. But hey - we all grow up.

As far as this episode of TC goes, I thought you were an excellent guest judge. You paid attention, you were respectful to the contestants and you weren't a rude a$$hat like some previous guest judges. I especially liked the way you disagreed with Tom and stood your ground in defending their choice of truffles (and I love Tom - but I totally disagreed with him too!). So, good job and I hope to see you back.

One does not become a chef for charity so strategic partnerships and brand alliances and shilling, even, is just part of the job. Mr. Bourdain would take a jab at Mother Teresa if she had but cooked for a living. And anyone on TV is shilling in my book, and good for them.

I loved that truffles comment. Not mediterranean? LMAO. I lolved the way he kepted saying mediterranean AND Italian. Indeed, the Dolomites are not what one would call mediterranean, and Piedmont isn't exactly on the coast but come on.

Good for standing up to Tom. Especially when he started saying that truffles are from France. Come on, Tom, the Chinese even have truffles and truffles are beginning to be grown in the US of A. Where do white truffles come from, after all? Now if you gave the botanical name, Tom, I'd forgive you a little more.

So, Rocco, don't let those guys bully you. I even voted for you on the smack down team. And don't let the viewer bully you either. Cook if you want to or shill if you want to. There's a song in that.

Thanks for being a guest judge on Top Chef, and for guest blogging for Padma. Personally, I think you've been raked over the coals long enough. People go through stressful events in their lives and they learn about themselves from it. Life is a constant challenge, and I doubt that anyone throwing stones at you has never gone through difficult situation without grace on a couple of occassions themselves. It's ridiculous for any of us to judge unless we've been in the same situation.

Anyone who has been through what you've been through, and publicly no less, might actually crawl into a corner and disappear from the spotlight. But the fact that you are still around and still "in the business" says something about your character and determination. I think you're a man who's been humbled in many ways. But I also see a fighter who is not willing to give up. I see someone who is still willing to put himself out there, despite the uphill battle. Bravo to you, Rocco! Keep up the good work, and keep up the fight!

Who in their lives has not been young and stupid at one time or another? Who hasn't made mistakes that they regret? No one.

I admire Rocco that he hasn't quit -- in fact he learned, matured, and moved on with his life. Evidence of this is how well he dealt with Anthony Bourdain's criticism (which, agreed, was quite funny), as well as Joey's comments, et cetera.

That aside...

I enjoyed Rocco's participation in the show the other night. His comments were constructive, he gave the the young chef's encouragement, and I found his analysis educational and interesting. I'd love to see him guest judge again .

Great job, Rocco. And nothing but god luck to you in the future.

I'd like to echo the above about your judging. Sometimes the guest judges are such jerks. You were, as mentioned, respectful and professional.

As other posters have noted; some of the other guest judges have shown up acting like they had something to prove; unnecessarily raking contestants over the coals (whether they deserved it or not.) I liked how you tried to treat everyone with respect with your comments and overall judging. I too was a fan of; "The Restaurant" and was sorry to see it gone. I am sure a lot of the "conflict" created was manipulated by producers looking for the money-scandals to increase viewer numbers and ratings. But the past is the past. None of us are perfect. By the way; I think you are looking great! Have you competed in the Triathalon yet? I have a friend that just completed the IronMan @ Lake Placid. If you have any weight loss pointers I'd be interested. I've lost a lot myself and need to lose a little bit more.

I think Tre will win this Season. I got this feeling the first episode. Joining him in the finale will either be Hung (if he doesnt trip over his huge ego), or Howie.

Peddling frozen dinners to busy American families is not meant to be your legacy in gastronomy. You know what, figures like Batali and Puck hawk frozen food lines as well, the only difference is that they still run reputable kitchens that are actively engaged in elevating the gastronomical horizons of the everyday diner. It is still not too late for you to achieve this objective once again, but you need to stop setting you eye on the quick buck and a future Food Network gig and utilize the tremendous abilities that bought you all this exposure in the first place. Then you can peddle cheesy Bertoli heat and serve meals all you want and no one will really give a damn.

I for one love a good tale of redemption and would like to see you along with many others, reclaim your birthright as a great American chef. At this point I am not so sure that this your supreme desire.

My husband and I really enjoyed this episode as we had both watched "the Restaurant." Your comments are insightful and well communicated.

I do remember Chef Bourdain saying that you might be many arrogant things, but that you were a true cook and could out-cook the best of them. Given this compliment, surrounded with multiple jibes and insults, I'm sure this is true. Are you opening a restaurant soon? Will you be back to guest judge?

I don't have a problem with celebrities whether they be actors or chefs, putting their names on products. But if I were to put my name on something, I would make sure it's high quality or at least good quality. I bought a hand blender from I think it was QVC that had Rocco's name on it and it's awful! I had the chance to see you at a cooking demonstration in FountainHills, AZ. Thought you were very nice and didnt come across "star Struck" at all to me. I got your cookbook and tried a receipe from it. It was sooo incredibly good!
If your not doing your own cooking anymore, hope you will again. Good job on top chef!

I am older, and my mother and gradmother were incredible cooks who taught me everything. And my husband cooks! We hardly ever eat out. We cook in bulk and make our own "frozen dinners". Many people can't afford to eat at fancy innovative restaurants. That is reality. So I'm glad there are more healthy, good quality frozen and fast cook options on the market. They're not as good as home-made from scratch, but they are a step in the right direction. And with the plethera of cooking shows on TV these days, I think the pendulum is finally swinging back towards more home cooked meals.

So keep up the good attitude and good luck in all of your future endeavors. I hope you come back as guest judge again on TC. You were like a breath of fresh air.

And if cozying up with a frozen food brand ensures that you're not broke, go for it. Screw Bourdain, he's too self-important for his own good. Karma has a way of coming back around. I do however agree with him that you need to get back in the kitchen. At the same time, though, what kitchen has he been running recently? Got time for that in between the tv show, guest spots on Top Chef, writing, etc? Turn that analytical bent inward, Anthony.

I would like to say that after reading the other blogs, I was not terribly impressed with you, but now, after reading yours, I have changed my mind. This is a very intelligent commentary on a show that is full of different personalities and opinions.
I liked this challenge because it asked a lot of the contestants. They had to know flavors and techniques and they had to sell their dishes.
It is interesting that those who worked well as teams did the best. I'm always a little shocked when these supposed professionals cannot get along for 2 or 3 hours. Joey and Hung should have sat down and discussed the challenge rather than racing around the kitchen. They had plenty of time. Hung does not know how to communicate, and Joey did not know how to listen. Also, Howie was determined from the start not to let Sara do much of anything, so she was doomed. I do think she should have been eliminated this time rather than Joey, but she did not stand a chance with Howie as a partner.

Hopefully, we'll see more of you because you are just adorable!! (I know that is not germane to being a great cook - but it doesn't hurt...)

I had never heard of you (& your restaurant) until Bravo ran a show about you (& it). I was unfamiliar with A. Bourdain or Tom C. before Top Chef. Since I don't live in NYC, how would I hear of any of you? That said, based upon your recent judging stint, I found you quite sweet and articulate. Bravo to you for expressing your disagreement about what Mediterranean is to TOM C. (He needs to be challenged once in a while...)

As for "shilling" for Bertolli - that is ridiculous. Many chefs, or other celebs promote products, cars, milk, for money. Big deal. Your detractors need to realize that you have every right to earn a living as they do (if they are so lucky to be given a whole show to travel around the world and eat whatever they want...ahem).

Thank you for taking the time to write this blog and addressing some of the criticism that ensued after your TC appearance.

Rocco - good for you for taking the hits in stride. I cannot believe they voted Tre off the show. He was the best chef on that team tonight. Casey & CJ's dishes were bad according to the judges; they only cooked 1 dish. The guy working the front of the house didn't cook anything. Tre made 3 dishes and served as executive chef. I wonder if they set him up to fail. Tre was the only one on the team with a good dish; granted the judges didn't like his other 2 dishes. Bryan didn't cook at all; why would you send someone home who cooked on a cooking show vs. letting someone stay who didn't cook anything.
