Though we've been reading her for years, it seems that many readers were taken by surprise when reading her review of the restaurants featured on last week's episode. Naming a restaurant is sort of like naming a child. It’s not something to be taken lightly. In fact, other than hiring your chef, it may be the most important decision any restaurateur makes. It will become your identity, your signature, and the word (or words) that will most closely be associated with your restaurant. So it’s rather important to use a word or term that encompasses what your vision of your restaurant might be. Padma graciously asked me to guest blog for her. So I said, “sure, why not?” I had such a wonderful time being a guest judge on Top Chef that I want to, foremost, thank the folks at Bravo, Magical Elves, Tom, Padma, Gail and Ted. I want to congratulate them on their well-deserved Emmy nomination.
I have been a fan of Tom’s work since I trailed at his three star NYC restaurant Mondrian about 15 years ago. As far as I am concerned, any work with Tom is work to be proud of. I met Padma 7 years ago at a photo shoot; lovely then, lovely now. Ted and I are friends from the Bravo/NBC world and Gail is a new friend.

Last week I confessed that I hadn’t been a religious follower of Top Chef. Since I have been invited to be a guest blogger for the remainder of the season, it’s time to reveal that my musings about the episode in which I appeared as a guest judge was my first blog. Ever. I really enjoyed being a guest on Top Chef Miami. It was truly a great experience. The hosts listened attentively to our suggestions and comments regarding the Latin food and the cultural aspect of cooking a Latin American meal. The chefs did a wonderful job despite the pressure and stress of the competition.
I was surprised at the concept the chefs had of Latin food. They did not step outside the stereotypical spicy Latin food and they did not embrace the diversity of ingredients and dishes Latin American countries have to offer. The producers...]]>

The Quickfire Challenge with guest judge Alfred Portale, chef and owner of Gotham Bar and Grill, was a simple challenge using scallops, crayfish, and conch. The contestants had to catch and scoop out shellfish in 30 seconds. I loved the dynamism that this challenge brought out in all the chefs. It was fun to see them try to scoop out as much shellfish as possible, and I’m glad to report that the women hefted out just as much loot from the tank as their male counterparts...and even more in Tre’s case.
Shelling the fish, however, was an issue for Micah, who seemed to have no idea how to release the fish from their tough outer shells. Her conch salad was a failure because it lacked fish due to the fact that she probably could not shell enough in time, and the flavors just weren’t there.
