Finally, The Finale

Top Chef is a top tease! Even though I was a guest judge along with Michelle Bernstein and Todd English, only the permanent judges and God know who won.

So if you will, I humbly submit this blog in two parts. Here, I will describe my experience as Hung's sous chef and a guest taster who was dismissed when the real analysis and decision-making took place. And after I find out who won, along with the rest of you I will write part 2 to offer my thoughts on who won and why.

After 12 grueling, cringe filled episodes, we, the audience, were finally given an episode we could really sink our teeth into... Dale, Casey and Hung got to "bring it!" While I've enjoyed the quick fire and elimination challenges throughout the series, as a way to cull the herd, I was ready to see some unadulterated cooking without smoke bombs going off every ten feet.

With one day to plan and prep, the final lap.

I'm so happy Hung won. That's right all you haters! Seriously though, for me, this finale was different from previous seasons because as a viewer, I would've been happy to see any of them win.

Thank you for noting that we, as viewers, should choose our words wisely. We don't see everything, and we taste (which is what this whole thing was about) nothing. We are just shown edited versions - caricatures and slivers - of people that we really don't know at all. That's the sad part of reality shows. People are whittled down to crazy (good or bad) versions of themselves, and we either demonize, or place people on pedestals that they don't deserve either way.

Bravo to a great season, I'm looking forward to the next!

This is the best finale ever. The three chef were tested fairly, what ever happens they can't blame anyone but themselves. Casey tried to make some excuses though but she can't get away with it. She was really the favorite to win but she blew it. Yes, there were just a few who like Hung each of the chef's has something bad to say against him but were they just jealous of Hungs mastery in the kitchen? Most of the time he gets into their nerves because of their personal insecurities but what can we do he is just being himself. Yes!!! Hung is the Top Chef he earned and deserved the title for he got the whole package.

Dale's dishes were all bulky and I saw repetitive use of corns. I don't see Dale a winner at all. I was puzzled when Casey chosed pork belly for a dish and sheared the skin the day before. It was a great move on Bravo's part to add that element to an otherwise conventional albeit three-way finale. Seeing the "super sous chefs" stand puissantly next to their blithe and jittery chefs was a sight to behold, and undoubtedly was a grand morale boost to the "cheftestants. "

Yes he might have a proud aurora to his persona, but this WAS a competition. He focused on himself and tried to better himself. I'm surprised that the other judges didn't think it went well with his other dishes. Perhaps, but at least it was well executed. I think that's why he won this season, because he didn't have a badly executed dish that night unlike the other chefs. I'm sure even at four star/three star restaurants there are some courses in the meal that might now "wow" the diner, but there are generally never flops like the ones Dale and Casey had that evening. I'm glad Hung won - he got so much flak for being a jerk and only wanting to win but hey, it's a competition and someone's gotta do it. (I think perhaps you were "slightly" bias toward Hung since you did help him the day before...just an inkling...)

I have been a Top Chef fan from the beginning. I have enjoyed the show immensely. I must admit that I was very disappointed to see Hung win. I think Dale was the better CHEF by far. Hung is very egotistical, and in my opinion sabatoged some of the other Chefs. Thank you for the true "behind the scenes" account of Hung's talent. His culinary skills in executing his menu have always been apparent (It seems *to everyone*) in previous episodes. It was interesting to read he was able to communicate his passion instructions with clarity. I think it is easy to forget how competition and being judged (with so high a penalty) each week can affect your interactions with others. I have been so much more impressed with his substance than with Marcel's relatively weak and almost childish bravado which seems unanchored in a true solid foundation. I would hope now that Hung has gained recognition he will bring some of the "grace and elegance" he espouses to his person and not just to his food.
I have to ask, Chef, were you serious when you suggested opening a restaurant with Hung? I personally would think he would be worth his weight (or more ) in gold...

Chef Rocco, thank you for recognizing and supporting his cabilities!

I believe, based on talent alone, when given the opportunity to "show his passion", Hung will knock a lot of folks off their high horses (positions) that allow them to feel they can say Chef Hung's food doesn't convey his personality!

Everyone can sing Hung's praises from now to eternity, and while even a layperson could agree he's technically the best, his food still isn't what I would want to eat, nor is he somone I would like to work with or for.

This was the first time ever that I really thought the outcome was fixed from the beginning. Seeing Marcel among Hung's supporters just reinforced that - why would he bother if anyone else were going to win? When Hung lamented he didn't want to work with CJ or Howie, and then drew Sara's knife, it just seemed to be more than coincidence. This whole season just left a bad taste in my mouth, no pun intended.

Again, for me, this was the worst season so far, but I look forward to TC redeeming itself in season 4.

Top Chef, as a program, did what I thought was impossible at the end of the 2nd season - redeemed yourself!
Season 2 was a sham and Ilan was, and is, a disgrace as Top Chef - a one trick pony, good cook perhaps, but unworthy as the winner.
Both Dale or Hung would have been good choices, though I have believed from episode ONE that Hung was worthy and would hang in to the end and possibly win it all.
Every show needs an antagonist and Hung was appointed, unfairly at times I think.

Thank you for taking the time to write your blog. It allows someone like myself (just a Top-Chef viewer fan—nowhere close to be confused with a pro chef—I am happy to eat frozen bean burritos and corn dogs at anytime) to learn how a Top-Chef (as you) critiques and judges such a contest. I enjoyed reading your experience that you shared with us working as Hung’s sous-chef. I also enjoyed reading your extended critique on each dish that was presented to you as a guest taster. I wish I could be there and taste it myself to completely understand everything you said about each plate.

I was very happy to learn that on this finale these three promising contestants were given a fair chance to get to the finishing line with the assistance of expert reputable chefs (like you). I am hopeful that whoever came up with this great idea to actually use expert chefs to assist as sous-chefs for the finale was probably to make sure that there would be no room for debate or double-crossing allegations that tarnished the end on Season 2.

I bet it was a tough ordeal to the last contestants on Seasons 1 & 2 to have to trust and rely that their chosen or appointed ex-competitors (that were emotionally involved in the contest) to do an honest and put a great effort as sous-chefs to help the last remaining fellow competitors to win the same race that they were also hoping to win themselves at one point. Personally, I didn't want to see ex-competitors favor one chef over the other this year (which did seem to occur in the past 2 seasons on Top-Chef). In my view, this season (3) was done fairly (and very smart). Why? These three talented and inspirational contestants had neutral, expert, and professional chefs as sous-chefs. The only thing that could cause any of them to win or lose at this point was by their own hands.

I am very happy with the results for this great season. At the end, it wasn't judged by favoritism or anything like "The first female…" or "The first gay…” or "The first immigrant…t" to win Top-Chef. No, at the end, the winner of Top-Chef for Season 3 won because of his executions and delivery and not because of his sex, sexual preference, or nationality.

I can't wait to get hooked on with Season 4 of Top-Chef—I expect more and better things. For example: I like to see the contestants win a few more prizes during the elimination process—like that nice computer that Casey won at one point—it would be like a nice complimentary reward for their great efforts and maybe a small complimentary reward for those leaving us early in the contest. But all and all in this season everyone was great! The regular judges were great! The extra judges and tasters were great! All the contestants this season were great! Bravo!

P.S. Out of plain “noob” curiosity. Hung’s earlier dishes in the finale were critiqued by not having enough salt or acidity. My questions are: Isn’t this usually a personal preference? Like some like it more seasoned than others? I’ve been in tables where I see others eat the same dish I do, but yet some still reach out for the salt or pepper (or if eating fish, they ask for more lemon juice), while I think it’s seasoned perfect as the way it was served.

FYI: I am the same person that replied on Ilan's and Marcel’s blog on Sept. 27, 2007 under the alias as: Jeff -- I changed my name to Jay-Jay this time around since there was another Jeff that I didn't want to get confused with. Sorry for the confusion. (Maybe it would be a good idea to be able to prevent users with the same names to register, like a message stating that username already exists in the database, please choose another.)

It was curious to see how well the sous-chefs seemed to be paired with the cheftestants when the pairing was luck of the draw. Perhaps it would have worked equally well regardless. But you and Hung really seemed to do well together.

I thought it was curious hearing Casey's voiceover. She said something about the fact that, while it was great to have help, it would have been better, for her style, if she'd been able to have control of each step in the process. Her mind springboards and develops with each step and, with someone else in there, wouldn't have the opportunity to change course, add or eliminate an ingredient... More than that, it seemed evident that she hadn't come with much in the way of a plan. The last two seasons have had the last challenge be relatively the same: cook the best meal you can. Obviously, there were a few twists, but the primary instructions were the same. I would have thought that all the finalists would have used the weeks before the last two shows to think out at least a rough idea of what they'd do if given free rein.

And, um, this made me tear up a bit:
All too often we take cheap shots without the knowledge or experience to back up our words.

This is true not only on Top Chef, but for other reality-based shows, I'm sure.

You have been such a pleasure this season. When I think of Season 1, I think of Harold, of Dave's "I'm not your bitch, Bitch", and my displeasure at Lee Anne not making it to the end. When I think of Season 2, I think of what a trainwreck it was because of all the drama which had very little to do with the actual cooking. When I think of Season 3, I think of how very much I enjoyed seeing you again and learning from you (both on the show and, more, here), and feeling like not only are you enormously talented in the kitchen, but you're funny and humble too. And you don't settle for the cheap shot.

Well it became clear that Hung was the Top Chef. Congrats to him. Dale did a great job and showed he was worthy of the finale. I know lots of people think Tre should have been there but really if you re watch the episodes (yes I am a TC addict and have watched the whole series more than once) Tre is a great chef, wonderful person, but he did disappoint more than once on his way to elimination. Besides he did win a trip to Italy! From the beginning of the finale it was obvious Casey was not going to do well. Her sighing and nervousness were obvious throughout. I am a huge Casey fan and yes did want to see a woman win. However it really was only because Brian threw to many ingredients into his dish last episode that she even survived to the finale.

However was wondering about the twist with the helpers and the celebrity chef touch was very cool. The next day though I had to feel a bit bad for Casey getting Howie. I just don't think he would be the one I would choose or any of the other chefs would regardless of how good a cook he is.

It was obvious that Hung had a ton of confidence and Casey had none and Dale seemed just happy to be there. Emotions do influence your performance a lot.

hey rocco - i love your long detailed blogs. along w/ ted and bourdain yours has been my favorite this season. glad you got to cook for the winning chef! all his food sounded great, as did much of dales. i guess hung won a couple of courses, but never real "lost" one either - nothing he made was bad, save for some reservations from the judges on a couple of things. my girlfriend reckons he could have brought an asian ingredient into the dessert - coconut cream perhaps - to help bridge it to his other courses. it certainly looked like a perfect chocolate cake, even if it was a bit of a 90s thing. i'm wondering about the idea of an acid in the himachi that all the judges felt should be present - would this not have diminished a silky quality to the raw fish? or maybe he could have substituted a powdered dried lemon for his powdered olive oil so that it wasn't a wet acid in direct contact with the protein ... anyway, regardless, his dish still won the round as it was.

In terms of the show the only thing I'd like to suggest is for the producers NOT to over-edit. Here's something to think about for next time. Make the chefs make pure vegetarian menus that are filling, unique and tasty. That would be a challenge I would enjoy.

It seems that Hung really won in large part due to his superior sous vide techniques. He really came full circle with it. In this season's first episode, Hung nearly won the elimination by using it on black chicken. In the French Culinary Institute episode, he did win when he used it on regular chicken. Finally he gave the knock-out punch in the finale by using it again with duck. Some, like Casey, might say he used it too much. Others, like Marcel in his blog, would beg to differ. I knew Casey was in trouble from the moment I heard her say she was having trouble breathing. I've been through that in high altitude and you can't think clearly. She said at one point in time she didn't know what she was doing. That could be why she overlooked the leeks. She wasn't my favorite to win but I saw her struggle.

I think they beat up on her badly, moreso than they needed to. She was close to tears. She already knew she hadn't made the cut. There was no need to embarrass her. I wish someone like Tre who is her friend could have been there for her. He would have been able to advise her along the way. That is what all of you wonderful chefs were not able to do.
I do think Howie worked his ass off for her. He wanted to help her win. I don't think she gave up any control to him so I was a little surprised by that remark.
I was thoroughly tired of Dale and his potty mouth last night. He did well and I'm happy about that, but every time he opened his mouth I could have thrown my shoe at the TV.
Congratulations to HUNG, who is very deserving of the title.

The thought behind the meal was at another level then Dale or Casey. The progression of courses seemed very well planned and it was just overall a complete meal. Wow, Casey sure tanked. It seemed she was having quite a bit of issues with the altitude and wasn't thinking straight. The salmon roe and foi gras?? I threw up in my mouth a little when I saw that one. Her confidence wasn't there.

Thanks for the great blog, Rocco! Looking forward to part II. I was so sad to see Casey flop! And I would have been happy to see either Dale or Hung win. They both did very well. You have been a great contributor to the show and I hope to see you on the next season of TC!

I thought Dale really proved himself and clearly he has to know that he's a great chef. He got major props from Tom--and he's the toughest critic of the judges!--as well as the great feedback from Eric Ripert last week. Heady stuff indeed.

They were all far from mediocre and the challenges allowed them to demonstrate their skills which are hard to come by. Hung was my favorite to win after Tre, and I am so glad he won!!! Given his choice of ingredients and knack for flavors, Dale would be my choice for a home-cooked meal, but Hung is indeed worthy of the title of Top Chef.

Rocco, thanks for your perspective this season. I hope we can enjoy more from you next time.

Ummm, as has been said before, it's Top Chef, not Top Personality. Where do you get "cheating?" Also, every one of the contestants are a bit self-centered and egotistical. Why else would they enter a contest where they thought they could be the best? What's wrong with a chef who knows he's good? No one accuses Dale of being egotistical, even though in clips he speaks of outcooking everyone else.

Also, I have to agree with what a lot of others said about Rocco. I had my preconceived, reality show edited, perceptions about Rocco. I've really got to say that it's been awesome to read his blog and get a glimpse into his personality.

Lordy, I never knew chefs were so incredibly hot and sexy! I could watch you and Tom C all night! And speaking of Tom, he was a man of honor in his judging. I think he knew all along who the TC was, and he needed to test Hung w/ his words last week.

Thank you for being in the finale, helping Hung, and for all that you do. I was very envious not to sit at that fine table last night and dine with all you cool judges.

I al SO glad that Brian M was invited to dinner, that was very classy on the part of TC. Seeing Howie and Sara return brought cheers of happiness at my home last night! I was even glad to see CJ, oh my!

Thanks for your speedy blog. I stayed up late to watch last night, drank a few beers too many, but woke up for work today with a smile. Can't wait for Season 4. Top Chef is the ONLY reality show I have watched, and it has been a sheer delight!

As a Chicagoan, I am so utterly proud of Dale and will support him wherever he works in the city. I'm sure he feels every bit as much of a TOP CHEF as Hung does right now, (excepting the $$ of course) and deservedly so. He really "got his chef back" and will certainly go on to great things. This show was a huge boost for him and I am very happy for him.

I have been a fan of Hung's all season ~ I *love* classic French food ~ and I am beyond thrilled that he was chosen TOP CHEF.

The finale was fabulous. I loved the conceit and reveal of having the pros be the sous chefs, of Brian being a guest and adding his perspective to the finale dinners. Not too thrilled with having them served simultaneously, but can see the advantages for the judges that way.

IMO, this was by far the best season of TOP CHEF. Knowing that season 4 is filming *right now* in Chicago has me excited beyond belief for season 4. I sincerely hope that you'll be participating again Rocco, and that I have a chance of seeing you around town.

Can't wait for your comments on the finale judging!

I think the TC editors didn't do him any favors with the general audience, but he's still got a huge number of fans who think he's a great cook--and great guy.

Just a question, though--wasn't Dale's highly praised scallops prepared pretty much solely by CJ? And wasn't Casey's most praised dish--the final "meat and potatoes"--made by Howie? I liked Dale and especially the (very, very gracious) Casey, but I think Hung's victory was clear-cut, even discounting the last day sous'.

Anyway, YAY HUNG!!!! And, Rocco? Many thanks for a blog that was a great pleasure to look forward to every week. I will miss it.
