I figured that since you guys took time to ask questions (and thank you, by the way), I could take time to respond:

"Lisa" wanted to know: If Harold can run a restaurant and make his blog deadline; surely I should be able to.

(Note: I'm writing Episode 5's blog a week after it aired.) You couldn't be more right. It should be on-time, but here's why it's been late: I spend most of the week on the road, and not all hotels carry Bravo (they should) and not all hotels have in-room Internet (and they should). So, I send it as I have access. The better question is: Why aren't I staying in better hotels? But I'll try harder.

What would I do for each week's challenge?

It's so much easier to answer that from the comfort of my home, with my feet up on the couch, a cold drink in my hand than when I had a timer ticking away, a camera crew in my face, and my reputation (and money) on the line. So out of respect for the current competitors and what they're going through, I'm going to decline to answer that. (Also because I never want to do a Quickfire again and you can't make me. Ha.)

Both as a former contestant and a viewer - do you ever feel that the judges let personal opinions of the chefs cloud their judgment of the dishes?

Sam - I have to say I was definitely NOT a fan of yours during season 2, as I still think you conducted yourself in a less than exemplary way when it came to dealing with Marcel. To all other bloggers - so enough being generous - did anyone else notice a subtext during last night's special? For example, Lee Anne defending Marcel during his absence, commenting on the fact that he has a definite culinary point of view (perhaps as opposed to Ilan who stole his restaurant's tasting menu)? Or that Tom noted that it's definitely important to know who you are before you open your own restaurant - maybe as a subtle cue to Ilan to grow up before he tries? I'm sorry, but I just can't get past Ilan's demeanor. Even last night he seemed insecure and petty, although to be fair that could just be my bias. But I do pick up some things from others - Harold saying he couldn't allow himself to be beaten by "that guy," Lee Anne jumping to Marcel's defense last night, Tom's final blog for season 2, Ted Allen calling Ilan a "fortunate cook" and even Mario Batali mentioning the seeming rip off of the tasting menu. I feel somewhat bad for putting this negative energy out there in the universe, but it just made me so mad and it is still with me the violence towards Marcel and the petty attacks of a personal nature towards him ("virgin," etc.). It should be about the food, and yep, Marcel can be an egomaniac, but you can tell that what drives him is the food. I really don't see him being so insecure as to scheme behind a fellow chef's back. There. I'm done with this finally.

I am glad that you didn't feel it necessary to keep your diabetes a secret. My 8 year old daughter has had diabetes since she was 3. Although it was a very difficult time in the beginning, she is very mature, tests herself, pulls her own shots and very soon will be learining to give herself her shots! Our only problem with her is "snacks". She is great at meal time, but since she is a little girl, sweet treats are what she wants. It is difficult to find fun snacks all the time for her.
What do you usually have for between meal snacks???

You, on the other hand, are honest without laying down shock value. I want to get back down to Grub and personally congratulate Betty Fraser for giving the little punk hell. She deserved to be portrayed in a more positive light, but we had to have Foamboy drama. Also, I feel sorry for Ilan. Foamboy brings out the worst in everyone. No wonder the Season 2 team lost to Season 1 in the cookoff. The Foam Fairy was there stirring up trouble.

Anyway, keep up the great insights! The truth about behind the scenes needs to see the light of day.

Secondly, you own up to your own stuff and really don't seem inclined to be petty toward others. Maybe you're really not "that guy"! Yes, you made gray eggs, and yes, no one really enjoys criticism, but you owned up to your stuff. You never tried to convince the judges that their palates were wrong.

Thirdly, you're doing an outstanding job on your blog here; bringing your own sense of style and self to it (plus your handy thesaurus). Somehow, you're able to be objective and critical, without being a jerk or coming across as superior.

I really, really wish you hadn't been on Season 2. I really think the rest of the madness of your season left many of us with a sour taste (and not a good one).

I shall endeavor to be as diplomatic as you've been and say nothing about the winner of your season. I will say I expect you will be able to find your perfect niche because you are extremely talented and do not seem to have limited yourself to one region (Spain, for example), spice (saffron, perhaps), or technique (foam, even?).

And for a purely superficial observation, Sam-with-short-hair is WAY hotter than Sam-with-longer-hair.

Let me say, thanks for the thesaurus! It gets a little old reading Ilan's umpteenth use of the word "interesting."

It also was - oops! nearly said "interesting" -- illuminating to hear about your travel experiences. Believe me, sometimes even staying in high-end hotels won't get you what it should; a few weeks back, we stayed in the St. Anthony Hotel in San Antonio, a formerly fantastic hotel that has been taken over by Wyndham and made into an overpriced ripoff. (Thank heavens, its management will be in the hands of La Corsha by the end of the year, and not a moment too soon - my dad's stayed there since 1944, and this was the first bad experience he's had.)

Among other things, the $200-a-night room didn't include free Internet, which I've been able to get at motels costing $30-$40 a night across the East Coast and the Southwest. A $22 "all-inclusive" breakfast, my dad was dismayed to find, was not only terrible and uniformly lukewarm, but didn't include coffee, a basic most any other hotel would include in a free continental breakfast. So don't fool yourself you're just not paying enough!

Thanks for answering so many questions and for "coming out" about your diabetes. Hoping you will continue to inspire others that diabetes doesn't have to mean giving up a love of food -- and maybe even inspire a challenge for next season!

Brian with the snake and eel? I guess that is a problem I see with many chefs. They discover a tasty dish from some cuisine, never bother learning much about it, and then just apply their own training to prep the dish witrhout understanding why the locals use a different method.

Ok on to Season 3. I totally agree with what you said about Brian. I've had my eye on him since the first episode as well and he's really impressed me. And is it just me or are the judges a little more harsh this season? I also thought Hung was going to be the Marcel/Steven of this season but so far he's not quite there.
