A few things before I get into this episode:

A little gratuitous self-promotion.
I'm in a contest for Glad SimplyCooking Microwave Steaming Bags. If I'm voted the "steamiest" chef, the Juvenile Diabetes Foundation will get $30K. It would be amazing if I could win them this money (just don't tell the JDF that I love Cold Stone ice cream.)

I really, really, [b]really[/b] wanted to hear more from Daniel Boulud. What a waste to have him there - but not really give him a chance to, you know, talk. (Although he looked too adorable at JT with his glasses on).

And I continued to be awed/appalled by Howie's stubborness. When Daniel-freaking-Boulud is telling you that something is wrong with your risotto, I think it might be worth listening to. Instead, he retreated behind the "That's how I've always done it and I've been doing it that way for 11 years". Which, really, isn't a steallar endorsement.

When I first started teaching, my students bombed one section of their standardized tests. (It was 2nd grade and I'm sure they've somehow risen above this omission). Anyway, my principal tried to talk to me about it and I hid behind, "But I TAUGHT it - see, here's my lesson plan!". Well, ok, so I taught it. Obviously, they didn't learn it. Who's to blame? Me or the 7-year olds? Me. And I learned my lesson right then - at the age of 20.

So yeah, Howie might have been cooking it that way for a long time, but that doesn't make it taste any better, I'm not thinking.

One thing I'm surprised you didn't mention- the judges were considering sending Malarkey home for sweating? I couldn’t agree with you more. While I appreciate Andrea Strong’s blog, I would much rather hear Chef Daniel Boulud’s thoughts about Restaurant April and The Garage than Ms. Strong’s opinion. After all, he is the one who has been through this process before. I also agree that having two of the chefs work as designers was pointless. Even though restaurant April did look beautiful, the chefs’ could serve their (extremely) limited time better by cooking. That is what they are there for, isn’t it?

I was reading Alfred Portale's cookbook...forgot the name....and he has two recipes for risotta and gues what folks...both use heavy cream. One...just a few tablespoons and the other, about half a cup. He mixes with the final ingredients. So the jury is still out on this cream business.

I still want to know if the cheftestants decided on the strategy to take responsibility for somthing and almost adopt a divide and conquer approach. If everyone was a problem, no one would go home. Do you think they thought that up first?

I wonder if it was also in the judge's minds. After all, all the shows are planned out. This changes their production schedule...

I completely agree with you on two things: Casey is superb at keeping her cool in the kitchen and always showing the utmost professionalism. And, I'm 99% certain that next week we'll see a double elimination. My personal wish is that those two people are Howie and the other Sarah. Doesn't it seem like the producers are running out of ideas for the challenges? Been there done that kinda thing going on. And what is up with all of the endorsements? How about a charity challenge with all of the extra money coming in? I would like to see another challenge made for the "common" restaurant goer - like the Elk Lodge episode. Definitely not updates of "homecooked" type meals, but rather a showcase of each individual chef's specialty dishes, with the only judging to be made by the public whom tastes it. Tickets could be sold and the money could be donated to the winning chef's choice of charity. Make it a quickfire to play it safe.

CJ's much touted abilities as unifier and team leader are vastly overrated. He is all style and no substance when comes to these team challenges. At least you can see volatile personalities like Howie and Sara M. coming at you from miles away with" guns a blazin". They may lack subtilty and charm, but everything that is done by them is in your face, and in broad daylight without pretense. When CJ decides to do you in, he saunters up with that goofy smile and disarms you with his sarcasm while sticking the shiv in your stomach and twisting.

You need to stop being seduced by appearance, and look past the thin veneer that CJ presents as the affable amiable ex jock and provide some substantive criticism for a change, and stop going after the easy marks like Howie and Hung in this competition. It is this same lack of insight that allowed you and the others to be goaded by Ilan into carrying out his personal vandetta against Marcel, when in reality it was he who was the most vile figure in that house.

As for me I am pulling for "Team Ugly" to wipe the floor with "Team Beautiful". Nothing would make me happier than to see the smug smiles wiped from their faces ( except for Malarkey) and it would serve as poetic justice that the judges would see through CJ's act and him pay the ultimate price of elimination for the subtle stunts that he pulled in last week's episode.

Restaurant April as well as you, have vastly underrated the Garage team in spite of the fact that this group has more restaurant experience and has some cooks like Hung and Howie that have produced excellent food at times throughout the course of the competition.

If this were a beauty contest then CJ & Co would win hands down, but this is cook off and all you need to do is make great food for one day while your competition stumbles a little bit and I hope that it is underneath this scenario that Restaurant April is heading for a fall.

On the elimination challenge I couldn't agree more, what is wrong with the producers trying to judge chefs on their decor skills! Thank God they got another chance, I would hate to see Brian go!! I would love to see him against Tre on the final challenge. About Howie, I still don't understand why he is still there, I mean being a Chef means you would always have to work with other people as a team, so shouldn't the judges take that into consideration when the make an elimination??

I also feel that in order to be a Top Chef you need to know how to get along with others and take direction just as well as you can be a leader. Howie and Hung's choices are what made them easy marks for criticism, they shouldn't get a free pass just because CJ didn't name himself executive chef. The roles he assigned put April into the best possible position of winning, I give him credit for not letting his ego get in the way of recognizing that Tre had EC experience.

CJ sticking the shiv in someone's stomach and twisting? Obviously he was joking around with the judges about Brian, he's guilty of not reading the room correctly but in no way were his comments an attempt at getting Brian tossed. The next question CJ made it clear (along with the rest of the team) that Brian did not deserve the blame for all the front of the house failures.

Lack of insight? How obnoxious, just because people don't "see" what you see doesn't mean they lack insight.

I stand by my comments about Sam's lack of judgement. It helped lend Ilan tacit support into bullying the annoying but harmless Marcel last season and it is clouding his judgement about some of the contestants this Season. I don't think Sam is a bad egg and he has certainly improved as writer through much hard work throughout the course of the Season, but he often reaches for the obvious conclusion rather than peeling back the layers of a situation to get to the heart of the matter.

It doesn't make him a bad person no more than it makes you a bad person for calling me obnoxious Lisa.

( I hosted at Planter's Cafe downtown, now called Peninsula Grill.) But, the Glad people seem to think that J&W is in NC, instead of SC. Anyway- have you been back there in awhile- the place blew up! Yes, in real life people have to work with people they don't like. Also in real life, though, you can complain to human resources!!! The bottom line here, I think, is this. If it's a cooking competition rather than a personality contest, then people shouldn't be kept around solely for their disturbing personalities. And let's be honest---behavior and emotion behind the scenes does color what gets set out on the judges table. Why did I post this on your blog? Well frankly, I guess I'm just venting rather than believing anyone will ever admit this on camera, and I just think maybe you're the only one that will get it! BTW, I applaud your taste in ice cream, though I myself can't have it anymore for similar reasons, and I wish you luck on your steamy competition.

Two questions;

1. If Senor' uno nad CJ is so tough as described by you in a previous blog, why isn't he tough enough to keep it to himself and stop mentioning it every episode. It is not like he has one arm, or one leg , or even one tooth. He believes if he can struggle through life with one testicle he can take on and conquer any challenge - don't get me wrong, I guess I am glad I have two but - well I guess I just don't understand the handicap. 2. Why are the judges always harping on a lack of salt -especially comments like salt is the main ingredient for a hamburger? I produce some of the most flavorful food we have ever eaten and I do not add ANY salt - I is unhealthy and if you eat enough it can kill you - why promote it when you can use other spices and get more flavor. Seems like a cop out!!!!

Unfortunately Sara seemed to step up this week and Hung looks more and more like the world's most talented sous chef every week. Who wins now - they really don't seem to have the talent you guys had. Is Dale a sleeper or does he get fired next?

I attribute this to having spent the day before leaving for vacation reading blogs and steadily growing more 'goofy-happy' as you so accurately interpreted CJ's comment in your last blog entry. The chili's done along with a rack of ribs and a shrimp macaroni salad I'm ashamed to admit I don't remember making.) As for your comments, I mostly agree, though Casey happens to be on the bottom of my Top Chef candidates. While I agree cool under pressure counts, sometimes you need to lite one (the finley diced onion...come on!) I was more disappointed with Tre's departure as I thought he showed ingenuity and creativity with his food, though watching Hung and wishing I were eating Cj's dishes keeps me going week to week. And perhaps I'm naive (ok I am) but what's with everyone creating recipes they already make? Sara's gucamole from her roomate, Howie's rissotto of 15 years infamy or Brian's sausage all seemed so calculated I almost miss the element of surprise in their cooking. Sigh.

Guess I've added to the blog opinions of the world, sorry, but I'll still trust my tastebuds and a zagat reccomendation or two.

IMHO Brian should not have been criticized for his perspiration problem- at least he wasn't sweating into the food like Howie. Just sayin.........

It looked like Season 2, who had a lot less time between their season and the Four Star challenge, as opposed to Season 1, was a bit guarded getting back in front of the cameras again (with the exception of Marcel perhaps). As I watched that Four Star challenge, I couldn’t help but wonder if some of the things being spewed on the blogs were the cause for Season 2’s somewhat restrained demeanor. So your advice to Season 3 about not reading the blogs together with your commentary on the whole reality genre in your most recent blog made me glad to see that you were taking it all in stride. You were absolutely my favorite in Season 2 – I’d like to think that if I were in your shoes I would have handled things exactly the way you did. You took the challenges on seriously, with dignity, creativity and a boatload of talent. Anyhow, thanks for keeping things interesting without resorting to the type of conduct that often appears to keep reality players in the game longer than they deserve to be.
