Fabio Cooks: Ravioli Nudi

Today is Day Two of Fabio's 16-day Webathon where he will show you how to cook a different Italian dish each day.

April's Italian earthquake devastated the country's central region, leaving 300 dead and 28,000 homeless. It was the worst Italy's seen in three decades. The American Red Cross is now helping survivors recover from the tragic disaster.

Fabio Viviani is doing his part too. For 16 days we'll be rolling out videos of the Top Chef Alum cooking dishes derivative of the region affected in the earthquake.

His second dish? Ravioli Nudi

Thanks for doing this, for some reosan I can't seem to get it together to watch on Weds, so I keep missing the actual show. You're my lifeline.

I have the marcato atlas 150 wellness. We LOVE it. It is a hand crank. you can get a pasta maker that connects to your stand mixer, but I don't even have an electric can opener. Never been afraid of a little "elbow grease". my favorite pasta recipe is for Pici noodles. You can google pici noodle recipe. I use one with King Arthur flour. It does not use egg. Great flavor. Fabio, are you taking questions??? I'm wondering if you can give any pointers on homemade pasta - what pasta maker do you recommend??
