Teresa Giudice Shares One of Her Seven Fishes

RHONJ star serves up a taste of the holidays.

By Lauren Metz

All the presents have been unwrapped and Santa's back North, but you can still have a taste of the holidays year-round.

"For Christmas Eve, Italians have fish... lots of fish! We call it the Feast of the Seven Fishes," Real Housewives of New Jersey star Teresa Giudice blogs. Her impressive spread included linguini with clams, fried calamari, baccala with potatoes in red sauce, Mama Gorga's seafood salad, fried shrimp, clams casino and mussels fra diavolo for 20.

"We actually ended up making baccala three ways: baccala pizzaiola (with a red sauce), baccala insalata (a salad--my favorite), and fried," Teresa writes. "We also had broccoli rabe (Joe's fave) and roasted cauliflower."

As a special gift to her fans, Teresa listed the recipe for her Luscious Linguini with Manila Clams. Here's what you'll need for the Skinny Italian dish:

2 1/2 pounds Manila or littleneck clams
1/3 cup extra virgin olive oil
3 cloves garlic, minced
2/3 cup dry white wine
1/8 teaspoon salt
1/8 teaspoon crushed red hot pepper
1 pound linguini
2 tablespoons unsalted butter
1 tablespoon chopped fresh parsley

"Soak the clams in a large bowl of cold salted water for 20 minutes so they can expel any sand. Scrub the clams well under cold running water. Throw away any clams that are gaping open," T instructs. "Heat the oil and garlic in a large saucepan over medium heat until the garlic is golden, about 3 minutes.  Add the wine, salt, and hot pepper, and bring to a boil.  Cook until reduced by half, about 3 minutes.  Set aside."
