Yum Alert! Kathy Wakile’s Red Velvet Cake

Admit it, you drool a little every time one of Kathy Wakile’s desserts is shown on The Real Housewives of New Jersey. Sound about right? Then take a bite out of this kitchen goddess’ red velvet cake with cream cheese frosting courtesy of her website. (We hear your tummy growling.)
Ingredients:
2 1/4 cups of sifted cake flour (sifted then measured)
3 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
2 tablespoons red food coloring
1 teaspoon distilled white vinegar
2 teaspoons vanilla
1 1/2 cups sugar
2 sticks of unsalted butter (room temperature)
1/4 cup canola oil
2 large eggs
Time to get down to business. Preheat your oven to 350 degrees and butter and flour two 9 inch baking pans. "Sift flour, cocoa, baking powder, baking soda, and salt together and set aside," Kathy instructs. "In a separate bowl, whisk buttermilk, food coloring, vinegar, vanilla and oil."
Set that aside and then pick up another bowl. "Beat butter and sugar then add eggs one at a time, beating well after each addition. Beat in dry ingredients alternating with wet ingredients. 4 dry 3 wet (scrape sides of the mixing bowl after each addition)."
Bake that on the middle rack of your oven for 27 minutes and head over to KathyWakile.com to whip up the frosting.
Had the recipe (my own), but thanks none-the-less. However, I'm still so appalled at Kathy calling her Aunt an 'efin liar and her Uncle a coward, I cannot support this woman. Along, with her sneaky digs all the time re: Teresa and her calling anyone who likes Teresa various names.
And I think Kathy is adorable. She kind of lost her way last night on part 2 of the reunion show, but she's kept her mouth shut all season while Teresa kept ripping her up behind her back. She did apologize, so I know she realized what she had done. We all make mistakes. And as far as I can see, she makes the least of them among the crowd on this show. Teresa has alienated everyone. Kathy has not. I think that speaks volumes about Kathy's character vs. Teresa's character.
Just curious, and Kathy would know the answer to this. Why does Teresa insist Andy prounounce her name as Joo DA chay and all of her friends and family (including her own brother) call her family by the name of Joo DICE.
We all saw the real Kathy. Who calls someone else's mother an f'ing liar? Especially an aunt...a family member. She deserves to be "friends" with Caroine and Melissa. They can all eat each other when they are done being "friends" like the spiders that they are.
Now she wants to share recipes. Kathy, please be more original.

The Rosie outburst seemed to have made Andy and Jackie uncomfortable accept for Kathy and Melissa...I was embarrassed for Kathy and Rosie and they should feeled embarrassed and shamed for wanting to kill someone and verbalizing it...dont sweep this threat under the rug...no wonder teresa did not want this family on the show because she knows their dark side...and now we have seen their dark side...hope Teresa gets a restraining order
Sounds like I have a new dessert for Thanksgiving when I host 30+ people. Red velvet is my sister's favorite so I know she'll be excited. thanks, Kathy!

Kathy, It is kind of too late to school Rosie on how to speak to someone like crazy Teresa. Rosie did more damage with her outburst and probably made Teresa very happy. That is what Teresa is all about. She instigates conflict to family members around her. Her jealousy eats at her more than her husband infidelities.
