Supporting Nina

Waylynn discusses Nina's big pop-up risk.

By Waylynn Lucas

I couldn't be happier that this episode starts out with my dessert for the James Beard House.

Pumpkin, sweet potato, curry white chocolate, yogurt sorbet, and chicory,  it is one of my favorite desserts creations. It has such an autumnal feel and taste.

I still get emotional thinking about being in New York and looking at locations for  a second Fonuts. I never would have thought it possible I would see such a demand for a New York location so soon! We are still exploring making this dream a reality. Timing is everything.

So much is happening right now for the girls. Jessica is getting work, and Nina has her big dinner! I couldn't be happier for them.

Just the thought of having to pull off a one-night-only "pop-up" restaurant in four days stresses me out. The amount of work and planning that goes into something like this usually takes weeks, even months.  I love Nina for taking on the challenge, not to mention the fact she has never done anything like this before.

Though I can barely keep my head above water with my own business, I cannot say no to a friend in need. I really want this to be a success for Nina. One less dish for her to worry about is a huge help.

It's quite a luxury to have all of us participate in a tasting of her menu the night before the event. Our collective feedback is vital to Nina, especially since she is pressed for time and this is her first pop-up.

Like I say in the episode, the food is good but needs some tweaking to be great. Like all great dishes, it takes a few times and some other input to get it just right.

I cannot wait to watch the dinner unfold and hope that everyone can put aside their issues and drama for the sake of supporting Nina!!
