Derby Shrimp
Spiced Shrimp with Fried Okra and Rhubard BBQ

Shrimp:
16 jumbo shrimp, peeled and deveined
3 cloves minced garlic
t sambal
1 T olive oil
Combine all and marinate for 3 hours. When ready to serve, either saute or grill until just cooked through.
Okra:
12 okra, sliced in half lengthwise
1/2 c flour 1/4 c corn starch
1 c sparkling water salt and pepper oil for frying
Heat oil to about 375 degrees. Whisk together flour, corn starch and water. Season with salt and pepper. Put okra into batter and coat. Place in oil and fry until crisp. Season with salt and pepper.
BBQ Sauce:
1 T butter
1/2 c onion, small diced
3 cloves garlic, minced
2 stalks rhubarb, thinly sliced
6 strawberries, sliced
2 T brown sugar
1/4 C Makers
1/2 c diced canned tomato
1/4 c water
In small saucepot, heat butter over medium heat. Add in onion and garlic and sweat 3 minutes. Stir in all other ingredients. Let simmer for 45 minutes. Blend until smooth and season with salt and pepper.
