Heirloom Tomato Sorbet
Heirloom Tomato and Goat Cheese Sorbet

Ingredients:
Tomato Salad:
12 ea Heirloom Tomatoes (each different type)
1 oz Micro Basil
Pinch Sea Salt (maldon preferably)
Pinch Sumac (optional)
1/2 c Extra Virgin Olive Oil
Goat Cheese Sorbet:
2 C Greek Yogurt
2 ea Lemon juice of
1 C Honey
1/2 C Cream
4 oz Goat Cheese
1 t Salt
Directions:
Tomato Salad:
Slice the tomatoes into bite size pieces any way you like. Sprinkle with salt and micro basil. Dress with olive oil.
Sorbet:
Heat cream over medium heat in a small sauce pot with goat cheese until melted, whisk. Place in bowl with remaining ingredients and mix well. Spin this in an Ice cream machine according to the manufacturer’s directions and serve on top of tomatoes.
