Ingredients

  • 2 tortillas
  • 2 T olive oil
  • ½ c red and green peppers, diced
  • ¼ c corn kernels
  • 4 eggs
  • 2 oz Cheddar cheese, shredded
  • 1 T cilantro, chopped

Directions

Fry tortillas on each side. Remove. Saute peppers and corn for 4 minutes. Whisk eggs. Stir eggs into skillet until fluffy. Add cheese and cilantro. Place egg mixture on top of one tortilla. Place second tortilla on top.

Notes

Pairing: Bloody Mary

Pour 2 oz vodka, 6 oz tomato juice, 2 dashes Worcestershire sauce and ½ fresh lemon over ice. Add hot sauce to taste.
