Ingredients
- Curry Chicken Salad
- 2 whole chicken breasts, poached
1/3 cup cashews, whole
2 Tablespoons raisins
3 Tablespoons coconut milk
1 Tablespoons lemon juice
2 tsp curry powder
1 tsp yellow mustard
1 Tablespoons scallion , sliced
kosher salt and pepper
bread or crackers
Directions
Curry Chicken Salad
- In a medium bowl, whisk together coconut milk, mustard, lemon juice and
curry powder. Add chicken, raisins, cashews and scallion. Season with
salt and pepper and fold all ingredients together.
Serve with bread or crackers.
