Ingredients
Brownie:
- 4 cups unsalted butter
- 8 cups granulated sugar
- 16 eggs
- 8 teaspoons vanilla extract
- 4 cups flour
- 2 2/3 cups cocoa powder
- 2 teaspoons kosher salt
- 2 teaspoons baking powder
Vanilla Creme Fraiche:
- 1 scraped Vanilla bean or 1 teaspoon vanilla extract
- 1 cup creme fraiche
- 1/4 cup powdered sugar
Strawberry Coulis:
- 2 cups strawberries, stems removed and quartered
- 3/4 cup sugar
- 1/4 cup lemon juice
- 1 pinch salt
Directions
Brownie:
- 1. Melt butter slowly in saucepan, bring to room temperature. Whisk eggs and butter together.
- 2. Mix dry ingredients together.
- 3. Mix all ingredients together. Place in two 2- inch hotel pans lined with buttered parchment.
- 4. Bake in oven at 350 degrees Fahrenheit for approximately 20 minutes. Do not over bake- until soft and slightly under baked.
Vanilla Creme Fraiche:
- 1. Whip in mixer with whisk attachment until fluffy and thoroughly combined. Serve chilled.
Strawberry Coulis:
- 1. Blend until sugar is completely dissolved. Pass through a chinois or small mesh strainer to remove seeds. Serve at room temperature.
