Cold Scottish Salmon

Ingredients
- 3 pounds fresh salmon fillet
- 1/2 quart olive oil
- 6 egg yolks
- 3 tablespoons whole grain mustard
- 4 tablespoons parsley chopped
- 6 radishes julienned
- 20 olive baguette croutons, toasted
- 1 lemon juice
- 3 tablespoons capers
Directions
Slice salmon thinly on the bias. Place on sheet pan, season with salt and pepper. Drizzle with water and bake in over at 375 degrees until rare, about 3-4 minutes. Transfer to another sheet pan. Cover up with plastic filet wrap.
Mix egg yolks, whole grain mustard, salt and pepper, and whisk in olive oil to end up with mayonnaise. Add chopped parsley, season the julienned radishes with olive oil, lemon juice, salt and pepper. Spread mustard sauce, thinly.
Display the salmon over it, garnish with capers and radish salad.
