Dish: Halibut with Fiery Celery Root Salad; Cocktail: "Encendido" (Vodka, Tomato and Horesradish)

Ingredients
Halibut:
- 4 4- ounce halibut filets
- Olive oil, as needed
Huancaina:
- 4 ounces queso fresco
- 2 tablespoons aji amarillo paste
- 4 ounces evaporated milk
- 1 packaged unsalted saltine crackers, processed into a powder
- 1 whole celery root, julienned
- 1 bunch kale, julienned
- 1 bunch cilantro, roughly chopped
- Lime juice, to taste
- Salt, to taste
Tomato Sauce:
- 3 overripe tomatoes, cut in half and grated on a box grater, discard skins
- 3 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 2 tablespoons goat butter, cold and diced
- 1 tablespoon parsley, minced
- 1 teaspoon thyme, chopped fine
- Salt, to taste
Encendido Cocktail:
- 6 whole overripe tomatoes, diced
- 2 tablespoons aji amarillo paste
- 3 cloves roasted garlic
- 2 tablespoons. grated fresh horseradish
- 3 Meyer lemons, zested and juiced
- 3 stalks celery, diced
- 2 teaspoons ground coriander, toasted
- Vodka, for mixing
Directions
Halibut:
Sear the halibut with olive oil until golden and cooked through.
Huancaina:
Blend all ingredients and let sit for 30 minutes in the refrigerator.
Toss the celery root, kale and cilantro with the sauce. Adjust flavor with lime and salt.
Tomato Sauce:
Heat a sauce pan over medium flame. Add the olive oil and garlic and toast until golden. Carefully add the grated tomato and simmer for 20 minutes.
Lower the heat and whisk in the butter, herbs and season with salt.
Encendido Cocktail:
Blend all ingredients (except vodka and salt) well. Season with salt.
Line a china cap or strainer with 2 coffee filters, and pour liquid into it. Allow mixture to strain for 4 hours overnight.
Refrigerate water and discard solids.
Fill a cocktail shaker with ice, pour in desired vodka, and 4 ounces of tomato water. Shake, strain and serve in shot glass.
