Fried Chicken Oysters with Mustard Gravy & Oyster Liquor

Ingredients
Fried chicken oysters:
- 3 each chicken oysters, meat from thigh
- 1 cup buttermilk
- 1 cup flour
- 1 tablespoon mustard powder
- 1 tablespoon salt
- 1 tablespoon cayenne
- 2 each oysters, chopped
- 1 cup chicken stock
- 1 bay leaf
- 2 sprigs thyme
- 2 tablespoons butter
- 2 tablespoons flour
- 1 tablespoon whole grain mustard
- 1 tablespoon capers, chopped
- 1 tablespoon dill
- 1 lemon, zested
Directions
Fried chicken oysters:
1. Soak chicken in buttermilk.
2. Mix all dry ingredients.
3. Add chicken to dry ingredients.
4. Fry at 375 degrees till golden.
1. In a pot, add stock, bay leaf, thyme and simmer.
2. Mix flour and butter together
3. Add to stock and milk.
4. Cook out for 5 minutes
5. Add everything else and serve.
