Ginger Soy Marinated Lo Mein, Chicken, Shrimp, & Vegetable

Ingredients
Marinated Chicken:
- 4 each boneless skinless chicken thighs- cut into thin strips
- 1 tablespoon sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon ginger- minced
- 2 bundles lo mein noodles
- 1-2 tablespoons sesame oil
- 1/2 tablespoon vegetable oil
- 1/2 tablespoon ginger-minced
- 1 tablespoon garlic- minced
- 4 tablespoons scallions- thin sliced rings
- 2 cups napa cabbage- cut into about ½ in. shreds
- 1 1/2 cups shiitake mushrooms- stems removed and sliced thin
- 3/4 cup broccoli- cut into small florets
- 3/4 cup carrots- peeled and cut into half-moon shapes about 1/8in.
- 1/2 cup celery- peeled and cut into half-moon shapes very thin
- 1 cup white bean sprout
- 1/2 tablespoon sesame seeds
- 2 tablespoons mirin
Directions
1. Add your chicken, sesame oil, soy sauce and ginger in a zip locking bag, seal and mix. Allow to marinate overnight.
2. Bring water to boil in a medium to large pot. Cook the lo mein noodles until just tender about 3-5 minute. Drain noodle and toss in a bowl with sesame oil, coating evenly so not to stick.
3. Bring a medium sauce pan of water to boil and have ready a bowl of ice water , then add your carrots. Cook for 1 minute, remove carrot with a slotted spoon and shock in the ice bath. Repeat with the broccoli.
4. Once cooled drain both vegetables completely.
5. Heat a large, non-stick sauté pan on medium and add in all contents from the bag of marinated chicken. Stir chicken around until fully cook, about 2-3 minute. Remove chicken and set aside. In the same pan add the vegetable oil and mushrooms cook for 1 minute. Add your ginger, garlic, half of the scallions, celery and cook for 30 seconds. Add the cabbage, carrots, and broccoli, cooking for an additional 30 second. Add in the chicken, noodles and mirin and toss around the pan to incorporate all ingredients until hot. Turn off the heat and add in the bean sprouts. Pour into a large serving bowl and finish with sesame seeds and the remainder of the chopped scallions.
Notes
This is a very versatile dish, any of your favorite vegetables or meats can be added or substituted. I like to add shrimp and chicken at the same time. If you do not want to use chicken thighs, chicken breast can easily take its place.
