Goat Cheese & Avocado on Baguette, Bacon Vinaigrette

Ingredients
- 1 ripe California avocado, halved, seeded, and peeled
- 2 ounces mild, soft goat cheese
- 1/4 lemon, juiced
- 1 dash Tabasco
- Sea salt and freshly ground black pepper, to taste
- 1/2 red tomato, thinly sliced
- 1/2 yellow tomato, thinly sliced
- 2 mini French baguettes, sliced in half lengthwise and lightly toasted
Bacon Shallot Drizzle:
- 1 tablespoon minced shallot
- 2 tablespoons crushed, crispy bacon
- 3 tablespoons extra virgin olive oil
- 2 tablespoons red wine vinegar
- Sea salt and freshly cracked black peppercorns, to taste
Directions
1. Combine avocados with goat cheese, lemon juice, Tabasco, and pepper in a large bowl. Mash with a fork until mixture is slightly lumpy, not a smooth puree. Taste and season sparingly with salt since goat cheese can be salty.
2. Spread toasted baguette halves with avocado goat cheese mixture. Place under the broiler or in microwave until warmed, about 1 to 2 minutes. Remove from oven and top with tomato slices.
3. Finish each open-faced sandwich with a drizzle of Bacon Shallot Vinaigrette and serve immediately.
Bacon Shallot Drizzle:
1. Stir all of the ingredients together in a small bowl. Drizzle over tomatoes on goat cheese and avocado sandwich.
