Grilled Watermelon & Tomato Salad with Charred Tomato Vinaigrette

Ingredients
- 1 small watermelon
- 3 large tomatoes
- 2 cups cherry heirloom tomatoes cut in half
- 2 shallots
- 3 cups olive oil
- 4 1/3 cups champagne vinegar
- 4 tablespoons honey
- 2 cups water
- 1 cup sugar
- 1/2 cup petit greens
- Salt to taste
Directions
Bring 2 cups of water, 2 cups of champagne vinegar, 1 cup of sugar and 2 tablespoons of salt to a boil. Cut watermelon in half and cut the red flesh from the rind, leaving behind the white and green parts of the rind. Cut the white of the rind away from the green and cut into strips. Place in the boiling pickling liquid. Cook until translucent and soft. Cool and cut into a dice.
Toss large tomatoes in olive oil to coat and sprinkle with salt. Place on a hot grill and cook until charred and soft. After the tomatoes are cooked, place in a blender with the shallots and 1 cup of vinegar. Blend on high and drizzle in 2 cups of olive oil and honey. Season to taste with salt, and place vinaigrette in fridge to cool.
Whisk together 1/3 cup vinegar, 1 cup oil, 1 tablespoon of honey and season to taste with salt. Cut watermelon into small rectangles and marinate in the vinaigrette you just whisked together and place on grill long enough to mark on all sides. Place watermelon on plate and toss the halved cherry heirloom tomatoes in the same vinaigrette the watermelon was marinated in and place around the watermelon. Spoon the charred tomato vinaigrette around the plate. Place the cooled watermelon rind pickles on the plate and finish by placing a few petit greens around.
