Halibut with Asparagus in Brown Butter Balsamic Vinaigrette

Ingredients
- 4 spears asparagus
- 6 ounce halibut filet – skin removed
- Olive oil- to coat bottom of pan
- 1 knob butter
- 2 shallots
- 2 tablespoons balsamic
- 2 tablespoons parsley, chopped
- Salt and pepper, to taste
Directions
1. In a sauté pan, cook the asparagus for about 3-5 minutes depending on size. Reserve.
2. Sauté fish in olive oil for about 1 1/2 minutes on each side. Remove from pan and add butter. Brown slightly, add the shallots and soften.
3. Add balsamic and bring to a boil. Add a little water to emulsify. Season with salt and pepper.
4. Add parsley.
5. Place asparagus in center of a plate, place fish on top and spoon the brown butter balsamic over.
