Light Smoked Char with Sweet Horseradish Shellfish Broth and Mashed Root Vegetables

Ingredients
Light Smoked Char:
- 1 side of Char
- ½ cup smoking chips
- ½ cup sugar
- ½ cup salt
Sweet Horseradish Shellfish Broth:
- 1 cup Chicken Stock
- 1 cup Fish Stock
- ½ cup White Wine
- 1 cup Apple Juice
- 2 tablespoons Apple Cider Vinegar
- 1 Lime
Ceviche:
- 2 tablespoons chopped clams
- Juice from 1 Lime
- 1 tablespoon crabmeat
- 2 tablespoons olive oil
- 1 tablespoon Soy
Mashed Root Vegetables:
- ½ Apple thinly sliced
- 4 leaves of Napa Cabbage, sliced thin
- 2 tablespoons soy
- 1 tablespoon sugar
- ½ cup onions
- 2 tablespoons chopped pickled ginger
Directions
For the Light Smoked Char:
1. Mix the salt and sugar together.
2. Cover the char in mixture and let marinade for 2 hours.
3. Smoke char for 10 minutes.
For the Sweet Horseradish Shellfish Broth:
1. Simmer all ingredients (excluding the lime) together for 30 minutes.
2. Strain and add in juice from 1 lime.
For the Ceviche:
1. Toss crabmeat and clams together.
2. Add in lime, soy and olive oil and let sit for 20 minutes.
To Warm Up:
1. Heat the char in the oven for 5 minutes.
2. Put in a bowl, add in the broth and ceviche.
For the Mashed Root Vegetables:
1. Toss all ingredients together.
2. Let sit for 1 hour before serving.
