Mummy Fried Shrimp, Fresh Avocado and Citrus Salad

Ingredients
- 8 16/20 peeled black tiger prawns
- 2 baking potatoes
- 1 pot of deep frying oil
- Sea salt for seasoning
Citrus Salad:
- 1 blood orange (peeled and sliced into 4 cartwheels)
- 1 ruby red grapefruit (peeled and sliced into 4 cartwheels)
- 1 navel orange (peeled and sliced into 4 cartwheels)
- 2 ounces extra virgin olive oil
- 1 tablespoon rough chopped cilantro
- Sea salt and cracked black pepper, to taste
Directions
1. Heat the oil to 375 degrees Fahrenheit.
2. Peel the potatoes.
3. Using a Benriner Japanese turning mandolin, turn the potatoes creating long strands of potato.
4. Take 2 strands of potato and wrap around the entire prawn like you are applying bandages.
5. Deep fry until golden, remove from the oil and season with salt.
Citrus Salad:
1. Combine all ingredients in a bowl and season with salt and black pepper.
To serve:
1. Arrange one slice of each citrus on the plates with cilantro.
2. Place one golden fried prawn on top of the citrus and serve.
