Bacon, Lettuce & Tomato Salad with Celery Seed Vinaigrette

Ingredients
Croutons:
- 1 tablespoon extra virgin olive oil
- 1 crusty roll, torn into small pieces
- Salt and freshly ground black pepper, to taste
Vinaigrette:
- 1 pinch celery seed
- 1 pinch crushed red pepper flakes
- Salt and freshly ground black pepper, to taste
- 1/4 lemon, juiced
- 1 tablespoon extra virgin olive oil
Salad:
- 1 thick slice bacon, cut into 1-inch strips
- 1 1/2 cups arugula and frissee
- 2 cherry tomatoes, halved
Directions
1. For croutons, heat the olive oil in a small skillet over medium low heat. Add bread, season with salt and pepper, and toss to coat with oil and seasoning. Sauté over medium-low heat, stirring frequently, until golden, about 5 minutes. Remove croutons to a plate.
2. Using the same pan as the croutons, fry bacon over medium heat until golden and crispy. Remove with a slotted spoon and drain well on paper towels.
3. Meanwhile, in a mortar and pestle combine celery seed, crushed red pepper, salt and fresh ground black pepper bruising lightly, and then add lemon juice and olive oil. Toss salad greens in a bowl with tomatoes, bacon, and croutons.
4. Sprinkle salad with the vinaigrette and toss to coat all ingredients evenly.
