French Toast with Caramelized Banana on a Stick and Maple Syrup Fluff

Ingredients

FRENCH TOAST
  • 8 eggs yolks
  • 1 pint cream
  • 1/2 vanilla bean
  • 16 pieces white bread, large dice
BANANAS
  • 16 pieces banana, large dice (same size as the bread cubes)
  • 1/4 cup sugar
MAPLE SYRUP FLUFF
  • 322 grams (1 cup) maple syrup
  • .80 grams xantham gum
  • 4.83 grams versa whip
ORANGE SAUCE
  • 1/2 cup sugar
  • 3 cups orange juice
GARNISH
  • Bittersweet chocolate, grated on a microplane
  • Peanut Butter Girl Scouts Cookies®, crushed
  • Micro Anise Hyssop

Directions

FRENCH TOAST

Mix the yolks, cream, and vanilla bean well in a large bowl. Right before serving, soak the cubes in the mix for 2 minutes before cooking. Make sure the cubes are golden brown on all sides.

BANANAS

Coat the banana cubes well with the sugar. Brown each side with a blow torch until golden brown.

MAPLE SYRUP FLUFF

Mix everything well in a bowl. Then add the base to an electric mixer and mix until fluff foams, about 5 minutes. Reserve until needed.

ORANGE SAUCE

Mix everything well and reduce to sauce consistency.
