Romaine Hearts with Cabrales Vinaigrette & Roasted Peppers

Ingredients
- 3 Heads of Hearts of Romaine
- 1/2 cup Cabrales
- 2 Tbsp Chopped Oregano
- 1/3 cup Lime Juice
- 2/3 cup EVOO
- Salt, to taste
- Black Pepper, to taste
- 1 cup Bread Crumbs
- 1 Tbsp Olive Oil
- 1 Roasted Poblano, peeled, seeded and diced
- 1 Red Pepper, roasted, peeled, seeded and diced
Directions
1 Blend all top ingredients together.
2 Toss romaine, peppers with vinaigrette and garnish with additional peppers and bread crumbs (toasted in olive oil).
