Sesame Glazed Korean Short Ribs with Celery Salsa & Asian Pear

Ingredients
Asian Pear and Sesame Glaze:
- 3 Leeks, sliced
- 8 Asian Pears, sliced
- 3 Tbsp Olive Oil
- 2 cups Sesame Oil
- 2 cups Honey
- 1/2 cup Soy
- 3 cups Sesame Seeds
Korean Short Ribs:
- 36 pieces of flanken cut Short ribs
- Salt & Pepper
- 4 Tbsp Oil
Asian Pear Salad:
- 8 Asian Pears, sliced
- 8 stalks of Celery, centers and leaves, sliced on bias
- 3 bunches Cilantro
- 1 cup Mirin
- 1/2 cup Rice Wine Vinegar
- 1/2 cup Lemon Juice
Directions
Asian Pear and Sesame Glaze:
1. Sweat leeks, Asian pears and olive oil for 10 minutes.
2. Add sesame oil, honey, soy and sesame seeds and cook for 45 minutes and puree.
Korean Short Ribs:
1. Sear short ribs on both sides.
2. Put on a hotel pan with about 1/4” stock or water and cook about 1 1/2 hours.
3. To finish, have a hot grill ready. Brush ribs with marinade and grill for 3 minutes on each side.
Asian Pear Salad:
1. Mix and adjust seasoning with salt and pepper.
2. Top short ribs with this salad.
