"Torta" Omelet with Lobster, Bacon, Caramelized Onion & Fennel

Ingredients
- 4 eggs, scrambled
- 2 slices bacon
- 1/4 onion, small diced
- 1/4 fennel, small diced
- 6 fingerlings, small diced
- 1 lobster, cooked and meat taken out
- Flat leaf parsley, just leaves
- Fennel fronds
- Lobster claw
- Lemon
Directions
1.) Cook bacon in the pan until some of the fat starts releasing. Add onion, fennel and fingerlings. Sauté until caramelized and potatoes are cooked, and season with salt and pepper to taste. Halve the mixture into two bowls and mix.
2.) Take the half lobster tail meat and chop into varying sized pieces - not too big because it’s going into the omelet. Place meat in one of the bowls with the vegetable mixture. Mix. Eat the other half. I would make a mini lobster roll.
3.) Take the vegetable mix without lobster and add the scrambled eggs. Mix. Start making your omelet. Add the vegetable-lobster mix to the middle of the omelet as filling. Fold out onto a plate.
4.) Take parsley, fennel fronds and lobster claw into a bowl. Squeeze lemon juice and season the salad. Put on plate with omelet.
