Tuna & Veal with Mediterranean Condiments

Ingredients
- 3 lbs veal loin
- 3 lbs tuna loin
- Salt & Pepper
- 1 lb tuna trim
- 3 oz olive oil
- 1 head garlic, peeled
- 1 can anchovies
- 1 egg yolk
- 2 lemons
Garnish:
- 1 head romaine
- 2 lemons
- 1 preserved lemon
- 1 tsp espelette pepper
- 1 oz olive oil
- 1 Tbl pine nuts
- ¼ bunch fresh dill
- 1 oz parmesan, grated
Directions
1. Season veal and cook in a pan to medium. Let rest and chill. Season tuna and lightly sear in a hot pan and then freeze.
2. Slice veal and tuna very thin and arrange on plate.
3. Combine tuna, oil, garlic, and anchovies in a saucepan. Cook until tuna is cooked through.
4. Puree in a blender and finish with egg yolk and lemon juice.
For Garnish:
1. Garnish the dish with baby romaine leaves, preserved lemon, lemon segments, espelette, olive oil, toasted pine nuts, dill, and grated parmesan.
