Tuna Tartare with Gooseberries, Fried Quail Egg and Fried Bread

Ingredients
- 2 oz sashimi-grade tuna
- ¼ cucumber, brunoised
- 2 gooseberries, brunoised
- ¼ cup sorrel, chopped
- 2 tablespoons extra virgin olive oil
- 2 quail eggs
- 2 tablespoons butter
- 2 small pieces of bread
Directions
1. Cut tuna into small dice and toss with cucumber, gooseberries, and chopped sorrel. Mix with olive oil and season with salt to taste. Set aside.
2. Melt butter in a pan and fry quail eggs until white is set, but yolk is still runny.
3. Fry a piece of bread in butter until crisp.
To Serve:
1. Place bread on plate and top with tuna tartare.
2. Place quail egg on top of tartare.
