Day 8: FRITTELLE DI RICOTTA – Ricotta Fritters with Raisins & Chocolate
Ingredients:
1/2 lb fresh ricotta cheese
2 cups all purpose flour
3 eggs
7 tbsp golden raisins
7 tbsp chocolate chips
2 1/2oz candied orange peel, chopped
1 tbsp baking powder
1/2 tsp freshly grated lemon zest
Salt
Vegetable oil for fryer
Sugar for dusting

Preparation: Mix ricotta and flour. Add eggs, raisins, chocolate chips, orange peel, baking powder, zest and pinch of salt. Mix thoroughly to combine. In a high-sided skillet, pour in enough oil to come 1 inch up the sides of the pan. Heat oil to 365-370 degrees. Add batter in batches, a spoonful at a time, pushing the batter off the spoon, so it’s rounded. Batter should puff slightly. Remove from oil with slotted spoon and once golden on all sides. Transfer to paper towel, sprinkle generously with sugar and serve warm.
