Watermelon King Crab Salad

Watermelon and King Crab Salad

Ingredients:

4oz Watermelon (cut into 4” x ½” squares) 3

oz King Crab (cleaned and picked.)

1T Chili (sliced. You can use any chili.)

1 T Mint Leaves (Torn)

1 Radish (sliced on a mandolin thin)

8 Raspberries.

1t Raspberry Wine Vinegar

2T Extra Virgin Olive Oil.

1/4t Sugar. Salt and Pepper.

Directions:

Pass raspberries through a tamis or colander as to make a puree. Add vinegar, sugar, oil and season. Toss crab, chilies, radish and mint with a tablespoon of the vinaigrette. Place the watermelon in the center of the plate, season with salt and pepper. Place the salad on top and drizzle with raspberry vinaigrette.
