Nina's Chocolate Tofu Pudding

The chef offers a recipe and comments on Brenda's disastrous birthday party.

Thanks for watching the season premiere of Eat, Drink Love. I'm going to start off by saying that the little ramekin my clients' son was demolishing was tofu pudding. If there is one thing I am not partial to it is tofu, but one of my favorite food journalists, the great Mark Bittman, has this insanely simple recipe that produces a lusciously creamy chocolate pudding using no dairy whatsoever (as much as I'm a cheese fanatic, I do think I'm slightly lactose intolerant). All you need to make this delightful dessert is silken tofu (make sure it's organic as soy is one of the top GMO crops), dark chocolate, and a blender. Here is the recipe for you to try:

1 lb silken tofu
8 ounces bittersweet chocolate, melted
1 tsp vanilla

(Original recipe calls for 3/4 c sugar syrup, which I omit, but feel free to add if you prefer a sweeter dessert)

Combine all the components and blend until smooth. Pour into serving glass or ramekin and chill for 30.

I like to top mine with candied kumquats and some Maldon flake salt. It breaks up the richness of the chocolate and gives it a savory and tart element.  

Addressing some other moments in Episode 1, I had an incredible experience working with Chef Greenspan. He is a true leader and teacher. Although I say I'll never work for a man again, he is definitely one that I would jump on the line for any day.  

As for the Truth or Dare moment at Brenda's birthday, I just wanted to get her some birthday love from the sausage boy. Hey, I was the only one that showed up without a gift! I just didn't realize it would snowball into a whole other story...
