Kathy Wakile recently wowed Top Chef Just Desserts judges Gail Simmons and Johnny Iuzzini with her sweet treats (watch her trip to Judges' Table), and now Real Housewives of New Jersey co-star Caroline Manzo is serving up sugary secrets.
"I'm not going to lie, I LOVE cranberries. I have a quick and easy recipe for fun little dessert," the New Jersey Housewife blogs before sharing the secret to this autumn appropriate treat. Bring a taste of Caroline's cooking into your own kitchen this season:
What you need:
2 cups of fresh cranberries
1/2 cup chopped walnuts
1 1/2 cups of sugar
1/2 tsp of vanilla extract
1 cup of flour
1/2 cup of melted butter
1/4 cup shortening melted (Crisco)
"To begin, set oven to 325 degrees. In a large bowl, mix cranberries with 1/2 cup sugar and nuts. In a separate bowl, beat eggs and 1 cup of sugar," Caroline instructs. "Then add flour, shortening, and melted butter to the egg mixture – blend evenly. Pour and spread the cranberry mixture in a greased 10 inch pan. Then gently pour the egg/flour mixture over the cranberries bake until crust is golden brown about 1 hr."
