Something’s Fishy with Teresa Giudice

The ‘Wife shares one of her favorite seafood recipes.

Teresa Giudice is a woman of her word. “As I promised, I'm going to give you another one of my favorite fish recipes,” the New Jersey Housewife writes on her site. “This is my Gorgeous Garlic Shrimp from my first cookbook Skinny Italian. It's super easy, and super healthy! Each serving (the recipe makes 4 servings) is only 230 calories, 27 grams of protein, 2 grams of carbs, and 12 grams of fat (but it's the good fat!).”

The garlic lover begins the recipe by giving her approval to add the extra spice should it suit your taste buds. Here’s what else you’ll need (Milania screams are optional):

3 tablespoons of extra virgin olive oil

3 garlic cloves, finely chopped

1.5 pounds of large shrimp, peeled and deveined

1/8 teaspoon of salt

1/8 teaspoon of freshly ground black pepper

3 tablespoons of fresh lemon juice

2 tablespoons of chopped fresh parsley

“Heat the oil and garlic together in a large skillet over medium-high heat, stirring occasionally, until the oil is hot and the garlic is softened, about 1 ½ minutes,” Teresa instructs. “Add the shrimp and season with the salt and pepper.” Continuously stir the shrimp until it turns opaque, which should happen in about four minutes.

Sprinkle a little lemon juice and parsley and stir. T recommends serving over rice and steamed asparagus. Then all that’s left to do is pop open a bottle of wine… or Fabellini.
