As those final episodes air and become part of his incredible archive of widely beloved television productions, we pay tribute to his memory and lasting legacy with a suggested tour of some of his favorite dishes in America, as seen on TV. Taste the flavors for yourself — and pause a moment to honor the man who showed us the beauty, community, passion — and indeed the pain — of the world through the lens of food.

Hangtown Fry — Tadich Grill, San Francisco

Bourdain loved San Francisco and made sure this oyster omelette, known to cure any hangover known to man, got its due time in the spotlight.

Torta Cubana — That's IT Market, San Francisco, CA

This beast of a sandwich is still a legend on the streets of San Francisco, thanks to Bourdain blowing up the spot in 2009.

Pig Ear Sandwich — Big Apple Inn, Jackson, MI

Did you know ears are edible? He loved this crunchy sandwich, which is tamer than it looks. 

Three Little Pigs — The Silver Palm, Chicago, IL

Head to the Windy City for more of Bourdain's favorite porcine pleasures. 

UPDATE: The Silver Palm has closed after 16 years, Eater reports. The restaurant announced the news September 14, 2018. 

Mandu — Myung In Dumplings Los Angeles, CA

Los Angeles' Koreatown was a favorite and frequent U.S. stop for Bourdain. Artist David Choe took him to get these mandu, or Korean dumplings, back in 2013 — and he was hooked.

Green Chile Salsa — Horseman's Haven Cafe, Santa Fe, NM

Do you like it hot? This "level 3" salsa almost brought him to his knees — where he begged for more.
