When I Met Susur Lee

Kelly Choi recalls her first encounter with the Master chef.

The first time I shared a conversation with Chef Susur Lee was when I booked him to appear on my restaurant show, Eat Out NY.

He’d opened his premiere New York restaurant, Shang, just a few months earlier amidst a lot of industry buzz, and I was eager to spotlight his ingenius food but also to get to know what made this Master tick (the restaurant has closed since then). I was excited, for sure, not just because he has such a stellar reputation, but also because I had fallen in love with his cookbook, Susur: a Culinary Life, and, well, he’s just friggin’ hot (his wife is just as gorgeous).

We prepared mouth-watering chicken thighs during my shoot, but Susur’s outstanding talent and ease with which he cooked in front of the cameras and had so much fun doing it really stuck out in my mind. Even my crew noticed how lively and animated he was. Here was a man who lived, breathed, and embodied the love of food and wanted to share it with the world.  Right after the shoot, I promptly rattled off an e-mail to the producers of Top Chef Masters recommending Susur for the show. In the end, I’m sure it didn’t matter, because they would’ve booked him on their own. Susur is internationally acclaimed, and the TCM producers are really that good.

When I saw that he, along with the other extraordinary chefs: Rick, Jody, Debbie, and Maria, were among the final group of master cooks to come to the Masters kitchen, it wasn’t a huge surprise. What did become a shock, however, was how the jovial Susur turned fiercely dark, almost tormented before my eyes when I announced the Quickfire results: Susur received just two-and-a-half stars and was in last place. He was embarrassed. And pissed! Viewers only saw a snippet of the humiliation Susur must have felt, for his angry mood lasted minutes. I could almost feel the heat from his anger emanating through his pores.

Well, whatever mind trick he told himself to bust ass and go all out for the Elimination Challenge obviously worked.

Susur’s menu of slow roasted curry chicken roulade stuffed with rich sausage, his creamy polenta and grits paired with sweet, chunky tomato jam was utter ambrosia. I loved his side sauces of searing hot mint chutney, too, and I vaguely remember a raita-like cucumber sauce that cooled the palate. Susur’s interplay of salty, sweet, sour, and spicy was a culinary symphony of deliciousness. It was hard to believe, as we all ate on the set of Modern Family, that one person hade made all of this food alone. Susur had roared back from dead last to a definitive first. He wholeheartedly deserved the second spot, along with Jody, to move into the Champions Round.
 
That said, I was really sad to see this class of wizard chefs go.

Rick Tramonto’s spirit is so celebratory and honest, and his food reflects his joy for life so enthusiastically. From his vibrant, playful fruit plate presentation in the QuickFire to his cozy, from-the-heart truffled white bean stew with succulent escarole and grilled sausage, Rick cooks from his soul. And his soul rocks.

Maria’s spunky, fun personality lit up our set. I loved how she called herself the Organic Girl Scout — hilarious. And her use of almond milk and sumac in her Elimination Challenge meal added a surprise taste that our Modern Family cast members really enjoyed.

Hello, i write from colombia, the tv show is amazing!!! my family and me enjoy it a lot!!!!recently just season 1 finish yesterday...and we liked it so much!!! congratulations!!!!

Even though I'm not a huge fan of Susur Lee, I think he should be the winner of Top Chef Master mainly based on his overall performance.

I think the score system for the finale should be different - it would be fair to all contestants if the overall performance plays a big part in determining who should earn the title of Top Chef Master because that's what a Top Chef Master all about - who's has been performing above average/winning throughout the show, instead of ONLY "one" shot!

I have to add a short comment to this discussion concerning the objection to not adding up the cumulative scores of the season to determine the final outcome. If that were the case in the NFL you would have to change the results of most of the championship winners. If the final challenge is the Super Bowl of TCM then let us all live with the results. I have to admit that I was surprised as well.

I found season 2 of TCM to be even better than season 1, which I loved. It was apparent how hard everyone on the show worked to improve the story-telling of the characters, adding more drama, and even the camera work was much improved. You could sense that the staff, from the critics to the contestants, were busting their butts to deliver the highest quality to the show.

Notice how the shots of LA, a vast geography, managed to show different aspects of LA without being intrusive and simultaneously telling of the city.

I challenge anybody who watched both seasons to tell me that Kelly Choi has not become so much more lovable compared to season 1.

And don't get me started on the contestants. After watching Top Chef, between seasons 1 and 2 of TCM, I realized how much more I enjoy TCM due to the richness of the experiences and characters of these truly top chefs.

My biggest complaint, and minor one at that, was not sensing enough consistency with the judges at the end of the show. Gael Green mentioned she had another obligation, but I would have liked the final judges to remained a consistent panel over the last 3-4 shows. If you have to bring on all 4, so be it.

All in all, a great show. Huge shoutout to the entire staff and contestants for making this a memorable and wildly entertaining season for foodies.

love kelly much better than padma. marcus should not of won the competition!!! it was between suser and rick. the two have been the best thru-out the show and then marcus won? his dishes were not as good as the other two. suser should of won! who cares about his bad language, he was funny and the way he behaves makes me laugh.

so Marcus won cooking the froi grass ganache that had been on Aquavit's menu for some years now? how innovative is that? and the fact that he is using the show to promote his new restaurant and does not mention the restaurant that made him famous and the recipes that he borrowed from: apple broth, herring, salmon... I am surprised he didn't do lingonberry and swedish pancakes...

Anyone who was watching the new Cook network,already knew that Marcus was the winner. He was everywere last week

Each chef is so unique, they are all have different styles. Different backgrounds and different paletes.

They are 3 Top Chef Masters, and it would of been amazing if Top Chef producer put another twist on the finale by giving them all
$100.00 for their charities. 3 Masters, is that so much? I think they all would of appreciated it.

I wished they tallied the accumulated scores instead (giving more weitht on the last cchallenge). This will prove who is the real Master Chef than a sudden death at the end. These Chef's have worked so hard trough out the season and their efferts need to be recognized. Also, the panel of judges should not see the scores given by the audience. I got the feeling in the 2 seasons that they seem to influence the outcome by adjusting their score to suit who they want to win the challenge. It appears to be unfair judging.

I love Susur Lee - didn't really care for Marcus from the beginning. Susur I believe is the real Top Chef Master. He consistently proved it through out the whole season receiving the highest or if not one of the highest marks thru andd thru. I believe, you need to tally the total marks attained instead of just using the last score as the decicion maker. The same thing with Season One, Hubert Keller displayed to me the real Top Chef quality. Although he was in my mind tied with Rick Bayliss.... was not a fan of Michael's cooking though.

I am also very disappointed with the results of this season. Going into the finale, I have always thought Rick and Susur were more talented than Marcus. That opinion aside, even after the last meal, I still thought the title was between the two and Marcus was out of the running. I can't believe Jay gave him 5 stars just because he guessed he might not have understood where he was coming from and that he did not compromise his backgrounds. Give him respect for that-not 5 stars. Susur should get his mouth under control, yes, but he has an amazing personality. Rick had wonderful dishes, also, throughout the competition, and nailed 2 of the 3 at the end. I also like Padma more than Kelly (with her awkward, almost forced smile)-and definitely more than Katie from the first season of Top Chef!

Kelly has really grown on me and I love her. I LOVE Top Chef Masters. I LOVE SUSUR LEE!!! I WISH HE WOULD HAVE WON!! However, I am fine with Marcus Winning!!! CONGRATULATIONS MARCUS!!!

My family and friends LOVE top chef and top chef master. We just wish that Top Chef Master would have a more insightful and personable host, especially who can also bring more creditability to the show. Kelly is okay, but she is kind of boring and has a very awkward smile.

I am surprised at how disappointed I am over the results of top chef masters 2. I honestly admire all the TC masters except for Marcus because of his attitude on the very first episode where he hugged the chef that got eliminated and whispered that the lesson to be learned was to "watch out for yourself and not help anyone". Then, althroughout the season, he was asking help from everyone! I personally feel like he didn't hold the true spirit of TOP CHEF Masters.

I like Top Chef Masters better than the regular Top Chef. The chefs dishes actually make me VERY hungry every time I watch the show, and I eat to live, not live to eat. Yet, I wish I could try the dishes. They look so delicious. Successful show-I would be honored if my education and literacy charity were a chef's choice...

for the most part I have enjoyed this season. You chsoe your chef's well. I wish at least one time you guys would away with the survivor tasks and let these guys do what they do best. I also wish you would put the fastidious putz James Oseland out to pasture. If he is on next season I will not watch. He has no objectivity. You are forcing these chef's outside of their comfort level with these tasks then this guy is penalizing them for going outside of his? Oseland isn't capable of the proper perspective to judge such a competition.

Now seriously, has the question of who designed the purple dress been answered? I love it.

I love Chef Susur! He should have his own show on Bravo because he is fascinating and fun and inspiring. I think it is no big deal that he likes to swear and so do I, it shows passion. Please, Bravo give Chef Susur Lee his own Bravo show, if he wants it, that is.

I think Kelly Choi does a great job on this show.Shes lovely and gives her opinion when needed. All the chefs come with so much expertise, they are so nice to watch.Susur has to get that foul mouth in check.Doesn't he know it's not who wins or loses but how you play the game.I like Susan.She's so talented and she plays nice too!!!!

Can someone please, please tell me where Kelli got the dress she wore on last weeks elimination challenge (the weird surf/turf challenge)??

Kelly is fine as host, she's a different lady from Padma, but they're both likable!

I'm on Team Kelly. Padma is not bad, but she has a way of sounding smug and bored. Kelly seems fun and approachable. I really like her as host and wish we could see more of her on Top Chef in general. Go Kelly! You keep doin' what you're doin'!

Susur is the my favorite, bad language and all!! that weddign cake ?? Crazy.. That cake should have it's own show!!!!

I can't stand to watch this show any longer. As a viewer from the very begining, the choice for host is the worse I have ever seen except for the host of Sheer Genuise. Whomever picked these women and thought they had any talent for talking or keeping us interested should be fired. Lost me as a viewer for both the shows I loved to watch until new hosts are found.

In my opinion Kelly Choi has more personality, class and charm in her little finger than Padma ever thought about having, Mr. Flamer!!!!

I think Kelly Choi is a delight after watching other hosts like Padma who talks so nasally that I could just scream. It is nice to see a host act like a host on a show!!

Chef Lee, You are obviously a chef of even more that Master quality if that is possible. However, Master means in complete control and until you learn to master your own anger and foul language, you will not be the respected man that you seek to be.

I do not enjoy Susur Lee's foul mouth...he doesn't speak english well enough to understand him except for the f word and other cuss words...Please Please ask him to CUT IT OUT!!!!

I would simply like to drop by and say that I love Kelly Choi as host for TC:Masters. With every episode she's becoming more and more comfortable in her role, and her personality is beginning to really shine through. I think she is one of the best additions to the Bravo family, and hope to see her around for a long time.

For those that are critical of Kelly's abilities as host, please do try to think back on Padma's own debut season (season 2 of TC). She looked really awkward and uncomfortable on screen; yet a few seasons after, few people can imagine TC without her.

Kelly did start out a bit shy in the first season of Masters, but this season she's really loosening up and shining through in every episode.

In short, I love Kelly Choi and hope to see her for many more episodes!

Please make sure you NEVER reveal the winner in a commercial BEFORE the winner is announced in the show!!! It's hard to believe the show/network made that mistake. Hopefully it will never happen again.

I am very disappointed with the choice of host for Top Chef Masters. I find that Kelly Choi's personality is very flat and uninspiring. She has a similar demeanour and mannerisms as Katie Lee Joel on Season 1 for Top Chef who was very uninspiring and very difficult to watch so it really spoiled the entire show. I have been an avid Top Chef viewer. I know that it is very difficult to fill Padma Lakshmi's shoes but I am sure you can find someone other than Kelly Choi who has more personality and genuine warmth to make the show as good as it should be.

I'm still in awe of this entire episode and Suser's journey...thinking he had the Quickfire advantage, coming in last, being angry, having his wife tell him to cut the crap and go cook, making an amazing Elimination Challenge meal and coming with HALF A STAR of a perfect score!! I'm impressed and I totally want to get to his restaurant now.

The Quickfire winner was the second place winner in the main challenge, so she would have gone on to the finals anyway.

My only issue with this episode was the Quickfire win getting an automatic finals berth. Seriously? A fruit plate?

I'd have also enjoyed the show more if I didn't see last night's ultimate winner in the ad for NEXT week's show. Way to go, Bravo!

With that said, what a showing by Suser. Just shy of a perfect score with what was a risky dinner menu!! THAT is awesome!!
