Re-mastering of: Rick Bayless' Ahi Tuna with Black Mole

1 Bowl – Diced red tomatoes
1 Bowl - Diced green tomatillo
1 Tablespoon - Sesame seeds
1 Tablespoon - Roasted almond 
1 Tablespoon - Cashews 
1 Tablespoon - Peanuts 
1 Banana
1 Bittersweet chocolate 
1 Onion 
1 Garlic
1 Cup of Cooking oil
1 Tablespoon - Chipotle chili
3 Pasilla chile pepper
2 Shredded Tortillas
1 oz Skinless boneless chicken 
Sea salt and pepper to taste
1 cup of Tequila
1/2 teaspoon Cinnamon 
1/2 teaspoon Thyme 
1/2 teaspoon Mexicano oregano
a few Cloves
1/2 Cup - Chicken broth


  1. Take onion and garlic and mix them together. Take chilies and add it to pot, followed by adding tortilla and sesame seed. Proceed to add tomatillo and red tomatoes in pot. 
  2. Sprinkle chicken with sea salt and pepper and then add chicken to tequila.
  3. Stir in almonds, peanuts, sesame seeds, cinnamon, cloves, thyme, oregano, thyme, and peppers into sauce.  Cut up half a banana and add chocolate. Bring sauce to a boil and add to food processor. 
  4. Place chicken in pan and let simmer. Once there is a crust flip chicken over. Once chicken is taken out of pot let it sit for a couple of minut
