Our fifth finale, our fifth fabulous location, our fifth tough decision. And at the end, a fifth winner to make us proud. How fitting that this season’s last episode took place in New Orleans, a city as diverse as it is historic — recently overcoming enormous challenges to rise from adversity wiser and more triumphant than before. In some small way, I feel the same about all three of our final contestants (even Stefan seemed to have lost some of his arrogance). Reflecting on the entire season, I now realize how much pressure they were under in New York, how exasperated they all became and how much they had changed — reinvigorated and ready for the tests ahead — when we faced them one last time. For our New Orleans final dinner we certainly threw them a few curve balls, and they in turn served us food we could never have anticipated, both to our delight and dismay.

Sazerac cocktails (a New Orleans specialty made with whisky and absinthe) and three flavorful hors d’oeuvres started our meal off on the best possible note. This was the surprise course thrown at our chefs at the eleventh hour. We were all impressed with how sophisticated and subtle they were, from Stefan’s creamy Alligator Soup to Hosea’s Blackened Red Fish on a Corn Cake and Carla’s Blue Crab with Chayote (or, in New Orleans, mirliton, as explained to me by world-renowned musician and my new favorite foodie, Branford Marsalis). We were hard-pressed to pick a true winner among them, as they were all so strong.

I hope it is clear from what you saw of Judges’ Table just how painstakingly difficult it was to reach our verdict. As much as we were rooting for dear Carla, her last two dishes were not of her own inspiration, and for this reason lacked the balance and simplicity we had come to expect. Her Sous-Vide New York Strip Steak (Carla cooking sous vide???) was totally off in texture and her Blue Cheese Soufflé did not even make it to the table. She relied on the advice of sous-chef Casey, and second-guessed her original plan. I was so incredibly sad for her, not just because these errors put her out of the running, but because it was clear how disappointed she was in herself. If only she knew how very proud of her we are. Although she did not win, we all agree her soulful food and colorful, generous personality will take her far.

I've always watched Top Chef and every year I hope that you guys would get better. What is wrong with Tom, Padma and Gail. Do you guys hate Stefan that much? How much can Tom display his hatred with Stefan on TV? The guy can cook and you guys know it. He seemed arrogant...yes. But would you really choose someone without credibility over someone who can actually cook? Hosea cheated on his girlfriend, cheated by not standing up when Adrianne was booted because he was too busy with Leah, he doesn't know how to work as a teamplayer...etc. Stefan on the otherhand helped his teammates even though others didn't want to work with him ( restaurant wars). It's so sad that you guys displayed your hatred for the Europeans on National TV. This was a competition about cooking and how well it was done. You guys need to evaluate your show better.

This finale sucked. They should have each gotten their own night to present their meals so that the judges could taste each meal in procession the way it was meant to be. And they should have been given more time. If they are going to cook the 'meal of their lives' time should not be such a significant factor.

I am mad that Carla listened to her sous chef. That girl lost, why should Carla take her advice. Carla was my favorite contestant throughout and I wish she could have been more confident in cooking her own food.

I really believed Carla was going to win tonight. I feel so badly for her because she didn't stand up for herself and her dishes when it mattered the most. Casey lost Top Chef for Carla and she should be ashamed of herself.

It was sad that Carla did let Casey (is it just me or is she looking prettier as each year goes on) push her off course from
'sending her love' like she normally did.

I think Gail touched on a point when she said Stephan's dessert felt like he had given up the fight and I think his answer to why he should be Top Chef reiterated that. He felt he had won enough challenges that he deserved the title and could coast on former victories.

Overall I think it was an incredible season of Top Chef with at least 6 chefs that I think we'll hear from over and over again in the years to come.

Forget about the top chef! That Judge Gail Simmons is one hot lady! This was my first time to watch this show and she made me be glued in front of the TV. =) Will she be on the next season?

I am glad that Josea won over Steffan. He always seemed to have a lot of interesting dishes to offer, and his inconsistent focus seemed to work on his nerves. Steffan was clearly a chef with highly developed technique, but his arrogance and chauvinism got in his way.

I'm very happy that Carla was also favored by someone at the judging table. Her kookiness was probably a symptom of her nerves, but it mellowed as she started coming up with dishes to wow the judges and I'm disappointed that she didn't win, but will look forward to hearing and learning more about her, and hopefully be able to sample her artistry and LOVE! Green eggs & ham!

Yeah we get it. The Top Chef can't make a three course meal because desserts are easy (which is why no one can make one...oh sorry Carla could but she's given minus points because desserts are easy) so they don't count and a bad attitude (the finger thank you) makes you the bestest chef on earth and someone everyone would die to work for.

Stefan should've won bottom line!!! He made a dessert and should've been rewarded for that. Dessert should be mandatory. You guys never have a dessert challenge (I know this is not Top Baker), but it will show the well-roundness of the competitors.

Very sad that Carla got royally sous vide by her sous chef! Carla was our favorite and it was really painful to watch Casey give her suggestions that ultimately the kind-hearted team player Carla took. Sous vide beef ... argh. That sure was not Carla's style - I think Carla would have a good sear on it if it was her own style. Carla's mistake was to go down the unfamiliar road of another chef. Casey thought she was being helpful when she really should have just kept her mouth shut and done her job as sous chef. Hosea was okay for this challenge, but Stefan was overall a more superior chef. It is also too bad that Jeff McInnis and Fabio were not in the finale instead of Hosea and Stefan - those two really cared about what they cooked, more so than most of the other chefs.

This finale showed that the chefs build different reputations throughout the season. I thought it was interesting that one minute Gail was saying that she really thought Stefan's squab really showed who he was as a chef and the history that he had in him, and the next minute Tom was critiquing his "soul" that went in to the food. Also it really was revealing that Hosea constantly kept repeating throughout the season that he was a seafood chef, but his seafood never turned out right. I don't know about the rest of you but I would rather go to Carla, Stefan, or Fabio's restaurants.

Congratulations to Hosea. I thought that Carla got cheated of at least having a chance to win by her sous-chef, who made terrible suggestions that threw Carla off her game. It was too bad that Carla took both of those suggestions -- that's why she failed, not due to any problems on her part. Anyone who's ever tried a souffle knows that it is very finicky and may or may not work on any given night. That was a very stupid suggestion, while the tart that Carla had planned to prepare would have been fine. It's too bad Carla was saddled with such an incompetent assistant, and it's too bad that she was generous enough to take her assistant's stupid suggestions instead of following her own plan.

What a shame! Carla was my favorite from day one and I loved watching her meet challenge after challenge with her signature bravado and style. Why was Casey even invited back? She shot herself in the foot constantly and threw in the towel during her last chance to make it. She is one of those who loves to throw a monkey wrench into the works. Why? Only her shrink knows for sure.
But Carla, I love you gal! You are not only a great chef, but you are also a great person. I would love to put my feet under your table anytime. Keep it up. Be true to yourself. And keep the LUV flowing!

Excellent post, Gail, as usual. We, as viewers, can only "judge" the food by what we see but I agreed with everything you said about tonight's competition. I'm very happy for Hoseah, truly disappointed for Carla, and believe that we'll still see great things from Stefan in the future.

It was wonderful seeing you on the final episodes, especially the finale. You've got fantastic, thoughtful insight about food, in general, and always have constructive opinions regarding the dishes that are prepared each week by the contestants.

This was another great season of my favorite show. I can't wait for it to start all over again. So, until then, eat well, be well, and we'll see you next year!

I hate how the judges don't take into account all of the challenges to date. I don't think that the winner of Top Chef can be decided with one meal, regardless if the challenge was to create the best meals of their lives. Stefan HAMMERED Hosea all season. HAMMERED. Stefan is not only more talented than Hosea, but he executes well thought out meals better. Hosea absolutely didn't deserve to win. STEFAN FOR TOP CHEF!

PS Stefan may be arrogant, but Hosea was smug wuss, and that's the most annoying thing you can find in a grown man.
