Try your own hand at the shrimp dumplings that took down Mei in his head-to-head Quickfire.

Steamed Shrimp Dumpling With Ginger and Herbs

Dumplings

Ingredients
½ lb shrimp (pureed)
1 Thai chili (minced)
1 scallion (sliced thin)
½ inch piece of ginger (diced)
Fish sauce (to taste)

Directions
1. Combine all and season with fish sauce and sugar
2. Place in wonton wrapper and steam for 7 minutes or until shrimp is cooked

Sauce

Ingredients
1 Tbsp sugar
1 Tbsp fish sauce
2 Tbsp lime juice
Scallions (sliced)
Cilantro (chopped)
Thai basil (chiffonade)

Directions
1. Combine all ingredients
2. To serve, scoop a small amount of sauce into center of dumpling and drizzle with olive oil
